Chicken Vegetable Penne

Cook the pasta according to the package directions; drain and return to the pot
- 1 pound penne pasta
- 1 tablespoon vegetable oil
- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch chunks
- 1/2 teaspoon salt
- 2 medium zucchini, cut into chunks
- 1 (12 oz.) jar chicken gravy
- 1 pint cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
Blue Cheese Dressing

In a small bowl, whisk together the buttermilk, sour cream, and 1/4 teaspoon pepper
- 1/2 cup buttermilk
- 1/4 cup sour cream
- Black pepper
- 4 oz. blue cheese, crumbled (1 cup)
Teriyaki Stir Fry Chicken

Place teriyaki sauce, ginger and garlic in a large resealable plastic bag
- 1/3 cup teriyaki sauce
- 1/2 tsp ground ginger
- 1 garlic clove, minced
- 1 1/2 lb uncooked boneless, skinless chicken breast, tenders (about 12 tenders)
- 2 tsp canola oil
- 1 cup bamboo shoots
- 1 cup water chestnuts, sliced
- 1 1/2 cup carrots, sliced
- 1 1/2 cup Chinese cabbage, shredded
- 2 cup snow peas
Chicken Piccata

- 2 split boneless, skinless chicken breasts
- Kosher salt and freshly ground black pepper
- 1/2 cup all-purpose flour
- 1 extra-large egg
- 1/2 tbsp water
- 3/4 cup seasoned dry bread crumbs
- Olive oil
- 3 tbsp unsalted butter
- 1/3 cup freshly squeezed lemon juice
- 1/2 cup dry white wine

Almond Romaine Salad

- 1/2 cup sliced almonds
- 3 tablespoons sugar
- 1/2 head lettuce
- 1/2 head Romaine
- 1 cup chopped celery
- 2 scallions sliced
- 1 small can Mandarin oranges, drained (optional)

Chicken Fried Steak

In a large resealable bag, marinate the cube steaks in the Worcestershire sauce for 30 minutes in the refrigerator
- 4 beef cubed steaks (1 to 1 1/4 lbs. total), pounded to 1/4- inch thickness
- 1/4 cup Worcestershire sauce

- 1/2 teaspoon salt
