Corn Casserole

Melt margarine, add corns, sour cream, grated cheese and corn muffin mix
- 1 cup grated mild cheddar cheese
- 1 package (8 ounces) Corn Muffin Mix
- 8 ounces sour cream
- 1 can (16.5 ounces) creamed corn
- 1/2 cup margarine
- Vegetable cooking spray
- 1 can (16 ounces) corn, undrained
Pork Roast With Carolina Gravy

Preheat oven to 350°. Remove and discard root ends and dark green tops of leeks
- 4 medium leeks
- 1 (5- to 6-lb.) bone-in pork shoulder roast (Boston butt)
- Kitchen string
- 2 teaspoons salt
- 2 teaspoons pepper
- 3 thick bacon slices, chopped
- 1 tablespoon vegetable oil
- 10 garlic cloves, halved
- 3 medium onions, halved and sliced
- 2 1/2 cups low-sodium chicken broth
- 1/2 cup dry white wine
- 10 fresh thyme sprigs
- 4 bay leaves
- 1 tablespoon butter
Spicy Hoisin Chicken

Whisk together all ingredients except chicken, then coat chicken all over with sauce
- 1/2 cup hoisin sauce
- 1 teaspoon finely grated peeled fresh ginger
- 4 garlic cloves, minced
- 1/2 teaspoon dried hot red pepper flakes
- 1/2 teaspoon Asian sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar (not seasoned)
- 8 chicken thighs
Chipotle Hummus

Puree all ingredients except bean liquid in a food processor
- 1 cans (15.5-oz) garbanzo beans ; (chickpeas) drained, with liquid reserved
- 1 teaspoons cumin powder
- 3/4 teaspoon Freshly ground pepper
- 3/4 teaspoon salt
- 3 - 5 Tablespoons Fresh lemon juice
- 2 Tablespoons extra virgin olive oil
- 1 teaspoon fresh garlic ; chopped
- 1 1/2 Tablespoons tahini ; (sesame seed paste)
- 2 whole chipotle chiles in adobo sauce ; (use more or less to taste)
- 1 teaspoons adobo sauce from canned chipotle chiles, seeds removed ; (use more or less to taste) shopping list
Ziti with Meat Sauce

Drain tomato juice from cans and reserve liquid
- 2 - 28 ounce can peeled tomatoes
- 1 red onion
- Olive Oil
- 1 garlic glove
- 1 pound ground sirloin
- 3 sweet Italian sausages cut into rough chunks
- 1 bunch parsley
- Basil, salt and pepper to taste
- 1 pound Ziti
- Ricotta and grated parmesan

- 1 chicken, 4 1/2 to 5 pounds
- 4 tablespoon butter, melted
- 1 tablespoon dried rosemary
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 whole lemon, 2 holes poked through rind
- 1 pound baby new potatoes

Firecracker Chicken Thighs

Remove skin from chicken thighs
- 1 1/2 - 2 pounds chicken thighs
- 2-3 tablespoons hot bean paste
- 2 tablespoons soy sauce
- 2 tablespoons toasted sesame seeds, crushed
- 1 tablespoon toasted sesame oil
- 1 tablespoon sugar
- 1/4 cup finely chopped green onions
- 4 large cloves garlic, minced (1 tablespoon)
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Breakfast Ring

Cut partially thawed rolls in half and place in greased bunt pan
- 1 package frozen rolls (24)
- 3/4 cup brown sugar
- 1 stick butter
- 3/4 teaspoon cinnamon
- 1 package butterscotch pudding mix (not instant)
- 1/2 cup chopped nuts
Scalloped Potatoes

Preheat oven to 400 degrees Lightly grease a 1 1/2 quart baking dish with the butter and set aside
- 2 teaspoons unsalted butter
- 6 cups heavy cream
- 5 1/2 pounds Idaho Potatoes, peeled and cut into 1/4 inch slices
- 1 tablespoon salt
- 1 1/2 teaspoon freshly ground black pepper
- 12 ounces Smoked Gouda cheese, grated
