Granola Mix

In large saucepan combine brown sugar, water, oil, honey, molasses, salt and cinnamon; heat until sugar is melted
- 10 c. old-fashioned oats
- 2 c. coconut
- 1 1/2 c. raisins
- 1 1/2 c. chopped dried fruit
- 3 1/2 c. chopped nuts (pecans or walnuts)
- 1 1/2 c. brown sugar
- 3/4 c. oil
- 1 1/2 c. water
- 1/4 c. molasses
- 3/4 c. honey
- 1/2 tsp. salt
- 3 tsp. vanilla
- 2 tsp. cinnamon
Jalapeno Popper Deviled Eggs

1. Preheat oven to 400F. Line a baking sheet with parchment paper
- 1/2 cup shredded pepper jack cheese
- 12 hard cooked eggs
- 3 tablespoons mayonnaise
- 3 tablespoons cream cheese, softened
- 1 jalapeno, seeded and finely chopped
- 3 tablespoons sliced green onions
- Salt and pepper
- 3 slices bacon, crisp cooked and finely crumbled
- Chili powder
Tzatziki Sauce

Combine yogurt, olive oil, lemon juice, garlic and pepper in a bowl
- 2 small cucumbers, peeled and diced
- 1 1/4 cup yogurt
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon dill, chopped
- 1 lemon, juiced
- white pepper, to taste
- salt, to taste
Magic Marshmallow Puffs

- 1 teaspoon cinnamon
- 16 marshmallows (large size)
- 1/4 cup (or more) butter, melted
- 2 cans (8 oz) quick crescent dinner rolls
- icing sugar
- 1/4 cups chopped nuts
My Favorite Boneless Pork Loin Chops

A simple little marinade. If the 'little black dress' has a food cousin - this would be it
- 6 boneless pork chops, about 3/4-inch thick, trimmed
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons fresh ginger root, chopped very fine
- 8 ounces Newcastle Brown Ale (or any good, dark and slightly sweet beer)
Mrs. Finley’s Jell-O Salad

- 2 pints cottage cheese
- 2 envelopes or one large envelope lime jell-o
- 2 20-ounce cans crushed pineapple, do not drain
- 2 envelopes whip topping (dream whip)

- 2 local, organic Granny Smith apples, unpeeled and julienned
- 1/2 ½ cup red onion, very thinly julienned
- 1/2 ½ cup lemon juice
- 2 tsp fennel seeds
- 1/4 ¼ cup fennel fronds
- 1/4 ¼ cup extra virgin olive oil
- Himalayan organic salt and cracked mixed pepper
Nectarine Salsa

Combine nectarines, avocado, green onions, cilantro, lime juice, jalapenos, garlic, and salt in a medium bowl
- 2 nectarines, chopped
- 1 medium avocado, chopped
- 2 large green onions, chopped
- 1/4 ¼ cup chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 1 to 2 tablespoon diced pickled jalapenos
- 1 clove garlic, chopped
- 1/4 ¼ teaspoon salt
Chinese Garlic Chicken

Cut the chicken into bite-sized cubes
- • Marinade:
- 1 • 1 pound boneless, skinless chicken breasts
- 1 • 1 tablespoon light soy sauce
- 1 • 1 tablespoon dry sherry
- • Other:
- 4 • 4 garlic cloves, finely minced
- 2 • 2 green onions, finely chopped on the diagonal
- • a few drops sesame oil
- 2 • 2 tablespoons light soy sauce
- 1 • 1 tablespoon dry sherry
- 1/4 • 1/4 teaspoon chili paste
- • Oil for stir-frying
Thanksgiving Stuffing

Preheat oven to 400 degrees
- 10 cups lightly packed bread cubes (from 1 pound loaf of bread) or 9 cups cubed unseasoned stuffing mix
- 8 tablespoons butter
- 2 large onions, chopped
- 2 celery ribs, chopped
- 1 pound sausage
- 2 teaspoons “poultry seasoning” such as Bells
- 1/2 ½ cup chopped parsley
- 4 tablespoons fresh sage
- 3/4 ¾ teaspoon salt
- 3/4 ¾ teaspoon fresh ground black pepper
- 3/4 to 1 ¾ to 1 cup chicken or turkey broth
- 1 egg, beaten
