Union Square Zucchini

Serves 4
- 4 small (6oz/180g) Zucchini, no wider than the star peeler blade (1 per person, and buy 1 extra)
- 1 tablespoon of Extra virgin olive oil or macadamia nut oil
- 1 clove of Garlic, peeled but left whole
- 2 -finger pinches of Chile flakes (or red pepper flakes)
- 1 teaspoon of Ghee
- 1/2 lemon of Lemon juice
- To taste, add salt and pepper
ROAST CHICKEN

•Combine all brining ingredients in a pot and bring to a boil, then let chill for two hours
- Ingredients:
- 1 whole chicken, about 2 to 3 lbs
- 1/4 cup chopped thyme
- 1 cup garlic oil
- For the brine:
- 1.5 gallons filtered water
- 2 cups honey
- 5 lemons, halved
- 2 each smashed lemongrass
- 20 cloves garlic, whole and peeled
- 1.5 cup salt
- 5 each sprigs parsley, whole with stems
- 20 black peppercorns
- 2 bay leaves

- 2 cups Panko bread crumbs
- 1 cup grated Parmesan
- 4 tablespoons olive oil, divided
- 2 tablespoons freshly minced thyme leaves
