Mini Pumpkin Pie Cheesecakes

- 2 tablespoons unsalted butter, melted
- 1 ⁄4 teaspoon table salt
- 1 cup graham cracker crumbs
- 8 ounces light cream cheese, softened (approximately 1 cup)
- 1 cup plain canned pumpkin (not pumpkin pie filling)
- 1/2 cup dark brown sugar
- 3 large eggs
- 1 teaspoon pumpkin pie spice
Apple Slab Pie

Preheat the oven to 350 degrees F
- Nonstick cooking spray, for spraying the pan
- Pinch of salt
- 4 1/3 cups all-purpose flour, plus more for flouring
- 1/2 cup plus 1 teaspoon sugar
- 1 3/4 cups (3 1/2 sticks) cold unsalted butter, cut into small pieces
- 3/4 cup ice water
- 1 pound Granny Smith apples, peeled, cored and cut into thin slices
- 1 pound Fuji apples, peeled, cored and cut into thin slices
- 1 pound Honeycrisp apples, peeled, cored and cut into thin slices
- 1 teaspoon ground cinnamon
- 1 large egg, whisked, for the egg wash
- Vanilla ice cream, for serving

- When you need a quick and easy dessert to satisfy a crowd, serve up this delicious dip with pie-crust crisps that are sprinkled with cinnamon sugar.
- Ingredients:
- Dip:
- 16 oz cream cheese, softened
- 1/2 cup confectioners' sugar
- 1/3 cup heavy cream
- 1 Tbsp pumpkin pie spice
- 1/2 tsp vanilla extract
- 1 Tbsp instant espresso powder
- Crisps:
- 1/4 tsp cinnamon
- 1 Tbsp sugar
- 2 ready-made pie crust sheets
- 1–2 Tbsp milk
Indian Cabbage

DIRECTIONS: Melt the butter in a non-stick wok or large skillet
- INGREDIENTS: 4 T. unsalted butter
- 1/2 tsp. whole cumin seed
- 1 jalapeno, seeded and cut into 1/8″ strips (julienned)
- 2 oz. thinly sliced yellow onion
- 1 carrot, grated
- 2 1/2 c. cabbage, 1/4” shred with a knife (it’s too fine with a food processor)
- Pinch salt
- Pinch ground turmeric
- 1/2 tsp. nigella seeds (I order from Penzey’s Spices)
- 1/2 tsp. my Garam Masala spice blend
- 1 T. lemon juice

Fresh Strawberry-Rhubarb Pie

Mom's Lasagna

Directions In a large Dutch oven or heavy pot, heat the olive oil over medium heat
- Ingredients
- 1/2 cup olive oil
- 1 onion, diced
- 4 garlic cloves, minced
- Pinch kosher salt and freshly ground black pepper
- 1 pound pork neck bones
- 1 pound ground veal
- 1 pound ground beef
- 1 pound spicy Italian sausage, loose or removed from casings
- 1/2 cup dry white wine
- 1 (28-ounce) can San Marzano tomatoes, with their juice
- 2 bay leaves
- 1 pound dried lasagna noodles
- 2 pounds whole milk ricotta cheese
- 1/4 cup chopped fresh flat-leaf parsley
- 1/4 cup chopped fresh basil leaves
- 1/4 cup chopped fresh oregano leaves
- 2 large eggs
- 1/2 cup grated Parmesan, plus more for final topping

Grilled Chicken Breast with Pico de Gallo

To prepare the pico de gallo, toss all the ingredients in a medium-size bowl until evenly combined
- Pico de Gallo:
- 4 ripe plum tomatoes, seeded and finely chopped
- 1 small white onion, finely chopped
- 1/2 cup loosely packed cilantro leaves, chopped
- 1 jalapeno pepper, seeded and finely chopped
- 1-1/2 Tbsp lime juice
- 1/2 tsp salt
- 1/2 tsp pepper
- Chicken:
- 4 (5–6 oz) boneless, skinless chicken breasts
- 1/4 cup extra virgin olive oil
- 4 garlic cloves, minced
- 1-1/4 tsp salt
- 1/2 tsp freshly ground black pepper
- Zest of 1 lemon
