Shredded Brussels Sprouts with Bacon and Walnuts

Directions: In a small bowl, whisk together vinegar, sugar, and oil; set aside
- 2 tablespoons cider vinegar
- 1 tablespoon brown sugar
- 1 tablespoon walnut oil (or oil of your choice, or apple cider)
- 6 slices thick cut bacon,
- 1 pound Brussels sprouts, trimmed and shredded (Use shredding blade on a food processor)
- 1/8 stick unsalted butter
- 1/2 cup toasted chopped walnuts
- kosher salt, to taste
- fresh ground black pepper, to taste
Risotto-Stuffed Grilled Chicken Breasts

To prepare the herb rub, add the listed ingredients to a food processor and process until a paste forms
- Herb rub:
- 1 cup flat parsley leaves
- 1/4 cup fresh sage leaves, roughly chopped
- 2 Tbsp fresh thyme leaves
- 1/4 cup fresh oregano leaves
- 1 Tbsp fresh rosemary leaves
- 1 Tbsp fresh basil
- 3 Tbsp extra virgin olive oil
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- Chicken:
- 1 cup chicken stock
- 1 Tbsp olive oil
- 1/4 cup onions, diced
- 4 medium mushrooms, finely diced
- 1 tsp minced garlic
- 1/2 cup Arborio rice
- 4 sun-dried tomatoes, finely diced
- 1/2 Tbsp butter
- 2 Tbsp Parmesan, grated
- 1/2 cup canned artichokes, chopped
- 1/4 tsp kosher salt
- 1/4 tsp ground black pepper
- 2 tsp herb rub
- 3/4 cup Fontina cheese, grated
- 6 8-oz boneless skinless chicken breasts
- 6 toothpicks
Beef Brisket Quesadillas

To prepare the brisket, preheat the oven to 350°F
- Brisket:
- 1 4-lb beef brisket, trimmed*
- 1 Tbsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 tsp cumin
- 1/2 tsp black pepper
- 1 Tbsp brown sugar
- 1 cup smoky barbecue sauce
- 1/2 cup beef broth
- Only 2 lbs of beef is needed for this recipe, but a brisket of that size might be difficult to find. Some grocery stores (or certainly a butcher) can cut you a 2-lb piece, if desired. Otherwise, follow the instructions below and freeze the excess.
- Quesadillas:
- 1 large onion, chopped and sautéed
- 4 cups cheddar cheese, shredded
- 4 cups pepper jack cheese, shredded
- 1 (16-oz) can refried beans
- 7 extra large (burrito-size) flour tortillas
- Oil for frying

- 1 cup white balsamic vinegar
- 1/2 cup tomato puree
- 1/4 cup brown sugar
- 2 teaspoons ground cumin
- 2 teaspoons garlic powder
- 2 teaspoons ground black pepper
- 1 teaspoon ground mustard

Chimichurri Steak Kebabs

Preheat oven to 375 degrees
- 1 cup cilantro - very finely chopped
- 1/4 cup garlic - minced
- 1/4 cup white vinegar
- 1/2 cup olive oil
- red pepper flakes - to taste
- 1 teaspoon of cumin
- 1 teaspoon of dried oregano
- salt and black pepper - to taste
- 1 lb steak - cut in 1.5 inch cubes
- 1 red onion - cubed
- 1 red pepper - cubed
- whole garlic cloves (one for each kebab)

Vitamix Vegan “Not So Cheese” Sauce

1.Place all ingredients into the Vitamix container in the order listed and secure lid
- 1 cup (240 ml) water
- 2 Tbsp (30 ml) lemon juice
- 1/4 cup (50 g) canned pimento, drained
- 2/3 cup (70 g) whole raw almonds
- 1 1/4 tsp onion powder
- 1/4 cup (30 g) nutritional yeast
- 2 tsp salt
