Fluffy Oatmeal Raisin Sandwich Cookies

Preheat the oven to 350 degrees F
- 1 cup butter, about 2 sticks, at room temperature
- 1 1/4 cups firmly packed brown sugar
- 1 large egg
- 1/4 cup milk
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 1/2 cups quick-cooking oats
- 1/2 cup raisins
- Hot fudge sauce, as needed
- Marshmallow creme, as needed (recommended: Fluff)
Granny Cake

- 1 1/2 c sugar
- 2 c flour
- 1/2 tsp salt
- 2 eggs
- 1 tsp baking soda
- 1 lg (20 oz.) can crushed pineapple in its own juice ( including juice)
- 1 c brown sugar
- 1 c chopped pecans
- 1 c evaporated milk
- 1/2 c sugar
- 1 stk margarine
- 1 tsp vanilla
Ham & Goat Cheese Croissant Sandwich

Preheat the oven to 350°F
- Sandwich:
- 4 croissants, baked and halved lengthwise
- 8 tsp whole grain mustard
- 8 tomato slices
- 12 oz smoked ham, thinly sliced
- 2/3 cup gruyere cheese, shredded
- Goat cheese-chives béchamel sauce (recipe follows)
- Béchamel Sauce:
- 2 Tbsp butter
- 2 Tbsp flour
- 1/4 tsp salt
- 1/4 tsp ground white pepper
- Pinch ground nutmeg
- Pinch ground cloves
- 1-1/4 cups milk, heated
- 6 oz goat cheese, softened
- 1/4 cup fresh chives, chopped
Crisp Cucumber Salsa Recipe

In a small bowl, combine the first seven ingredients
- 2 cups finely chopped seeded peeled cucumber
- 1/2 cup finely chopped seeded tomato
- 1/4 cup chopped red onion
- 2 tablespoons minced fresh parsley
- 1 jalapeno pepper, seeded and chopped
- 4-1/2 teaspoons minced fresh cilantro
- 1 garlic clove, minced
- 1/4 cup reduced-fat sour cream
- 1-1/2 teaspoons lemon juice
- 1-1/2 teaspoons lime juice
- 1/4 teaspoon ground cumin
- 1/4 teaspoon seasoned salt
- Baked tortilla chip scoops
Spicy Honey Dijon Sauce:

In a large mixing bowl (or food processor) combine all ingredients and mix well
- 1/2 cup Dijon mustard
- 1/4 cup honey
- 1 chipotle pepper in adobo sauce, minced
- 2 teaspoons adobo sauce (optional)
- 1 teaspoon cider vinegar
Grilled Greek Potato Salad Recipe

Drizzle potatoes with oil and sprinkle with salt and pepper; toss to coat
- 3 pounds small red potatoes, halved
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 large sweet yellow pepper, chopped
- 1 large sweet red pepper, chopped
- 1 medium red onion, halved and sliced
- 1 medium cucumber, chopped
- 1-1/4 cups grape tomatoes, halved
- 1/2 pound fresh mozzarella cheese, cubed
- 3/4 cup Greek vinaigrette
- 1/2 cup halved Greek olives
- 1 can (2-1/4 ounces) sliced ripe olives, drained
