- 1-1/2 lb medium-size russet potato, baked or boiled, and peeled and cut into quarters lengthwise, divided
- 1 cup frozen corn, defrosted and divided
- 2 tsp salt
- 1/2 tsp black pepper
- 2 strips thick-cut bacon, cooked and drained
- 1/2 –3/4 cup shredded cheddar cheese
- 2 scallions, sliced

- 8-oz cream cheese, room temperature
- 1/3 cup sugar
- 2/3 cup cocoa powder
- 1 tsp vanilla extract
- 1 cup marshmallow topping
- 1 tsp ground cinnamon
- Juice and zest of 1 orange
- 1 cup whipped topping
- Fruit (such as strawberries, cantaloupe, and pineapple, for serving)

- 2.5 C whole milk
- 6 T cocoa powder
- 2 t instant coffee/espresso powder
- 0.75 C sugar

- 4 large egg yolks
- 2 T cubed unsalted butter
- 1 t vanilla extract
- 1.25 C crumbled chocolate cake

- 1 lb. cooked potatoes, peeled, cubed to bite sizes pieces

- 1/4 cup chopped red onion
- 3 tb. Hellmann’s mayo (add more if you like a creamier consistency)
- 2 tsp. celery salt
- 1 tsp. dried dill
- 1 tb. Lawry’s Seasoned Salt
- 3 tb. Relish
- 2 tb. Dijon mustard

- 1/2 cup reduced sodium chicken stock
- Brown rice, cooked according to package directions
