Cranberry Upside-Down Cake

Make ItHEAT oven to 350°F
- What You Need1/4 cup butter, softened
- 4 cups cranberries
- 3/4 cup sugar
- 1 pkg. (3 oz.) JELL-O Cranberry Flavor Gelatin
- 2 tsp. orange zest
- 1 pkg. (2-layer size) white cake mix
- 1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
- 2 large eggs
- 1-1/3 cups water
- 2 Tbsp. oil
- 2 cups thawed COOL WHIP Whipped Topping
Sweet & Sour Chicken

1.Cook the chicken according to package directions
- 1 lb frozen breaded popcorn chicken
- 2 Tbsp oil
- 1 tsp fresh ginger, grated
- 1 cup onion, chopped
- 1 cup celery, sliced thin on the bias
- 1 cup green pepper, chopped
- 1 cup canned pineapple chunks
- 1/2 cup juice from canned pineapple
- 1/2 cup rice wine vinegar
- 2/3 cup ketchup
- 1 Tbsp cooking sherry
- 1/2 cup dry roasted cashews, chopped
- 2 cups long grain rice, cooked
ACORN SQUASH SOUP

- Ingredients:
- 4 Tbsp unsalted butter
- 1/2 onion, sliced
- 2 cloves garlic, sliced
- 1/2 cup Granny Smith or honeycrisp apples, peeled and cut into 1/2" pieces
- 2 cups acorn squash, peeled and cut into 1" pieces
- 1/2 cup sweet potato, peeled and cut into 1/2" pieces
- 1/2 cup parsnips, peeled and cut into 1/2" pieces
- 1/2 cup russet potatoes, peeled and cut into 1/2" pieces
- 2 tsp salt
- 1/4 tsp ground black pepper
- 1/2 tsp cinnamon
- 1/4 tsp dark chili powder
- 1/2 cup hard apple cider
- 4 cups low-sodium chicken stock
- 1/2 cup heavy cream
- 1/4 cup maple syrup
- 1/4 cup sour cream, for garnish
- 2 Tbsp chives, minced, for garnish

Combine cabbage, onion, peppers and olives
- 1 medium head cabbage, shredded
- 1 medium red onion, thinly sliced
- 1/2 cup chopped green pepper
- 1/2 cup chopped sweet red pepper
- 1/2 cup sliced pimiento-stuffed olives
- 1/2 cup white wine vinegar
- 1/2 cup canola oil
- 1/2 cup sugar
- 2 teaspoons Dijon mustard
- 1 teaspoon salt
- 1 teaspoon celery seed
- 1 teaspoon mustard seed

- Pie Crust
- The recipe makes a 10 inch wide pie
- Chris makes a lattice crust, but it could be a double crust
- 2 cups flour - she likes unbleached all purpose
- 3/4 cup shortening
- 1 tsp salt
- 5-7 T cold water
- Mix flour shortening and salt together with your fingers until crumbly
- Add water a little at a time so it all comes together
- Divide in 2 and roll out
- If you want a little more flaky crust, add a little more shortening and less water
- Blueberry Filling
- 1 qt of blueberry pie filling or 2 cans of your favorite filling
- 4 med apples sliced thin 2-21/2 cups
- 3 T sugar
- 1 heaping T flour
- 1/2 tsp cinnamon

- 2 small yellow onions, chopped
- 2 garlic cloves, peeled and chopped

Fourth of July Coleslaw

Remove and discard any bruised or undesirable outside leaves from the head of cabbage
- 1 firm head green cabbage (about 2 pounds)
- 2 carrots, peeled
- 1/2 small sweet onion, such as Vidalia, peeled and chopped fine
- 1/4 cup diced sweet bread and butter pickles
- 1/2 cup mayonnaise
- 1/2 teaspoon salt
