Penne with Tomatoes & White Beans Recipe

Cook pasta according to package directions
- 8 ounces uncooked penne pasta
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 2 cans (14-1/2 ounces each) Italian diced tomatoes, undrained
- 1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
- 1 package (10 ounces) fresh spinach, trimmed
- 1/4 cup sliced ripe olives
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup grated Parmesan cheese
Peanut Butter Passion Cake

Preheat oven to 350 degrees
- 2 c sugar
- 1 c vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 3 c all purpose flour
- 3/4 c cocoa, unsweetened
- 2 tsp baking powder
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 c coffee, room temperature (water can be substituted for the coffee but it's purpose is to enhance the chocolate flavor of the cocoa)
- 1 c buttermilk
- FROSTING
- 8 oz cream cheese, room temperature
- 1 c peanut butter, creamy
- 1/2 c powdered sugar
- 1/2 tsp salt
- 12 oz non-dairy whipped topping, thawed
- 1/2 c chocolate sandwich cookie crumbs
- 2 c chopped peanut butter cups
- 1/4 c prepared fudge frosting (any brand)
Apple Pancakes Recipe

In a large bowl, combine the biscuit mix, sugar substitute, baking powder, cinnamon and salt
- 2 cups reduced-fat biscuit/baking mix
- Sugar substitute equivalent to 2 teaspoons sugar
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup egg substitute
- 1 cup fat-free milk
- 2 teaspoons vanilla extract
- 1 tart apple, peeled and grated
CHICKEN CORDON BLEU PINWHEELS WITH DIJONNAISE

Bring a large pot of water to a boil over med-high heat
- 1 lb. Pasta (I used penne-you could use any fun shaped pasta)
- 1 cup Chicken Breasts, cooked and cubed
- 1 cup Ham, cooked and cubed
- 1 1/2 cups Milk
- 8 oz. Cream Cheese (softened)
- 2 Tbsp. Dried Minced Onion
- 2 cups Swiss Cheese, shredded
- Salt
- Pepper
- Cayenne Pepper
- 1 cup Panko Crumbs
- 1/2 cup Butter, melted
Kickin' Grilled Nachos

HEAT grill to medium-high heat
- 8 oz. tortilla chips
- 1 pkg. (8 oz.) KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA
- 1/2 cup finely chopped red onions
- 1 jalapeño pepper, seeded, finely chopped
- 1 tomato, chopped

Directions: Mix brownie mixes according to directions
- 1 box brownie mix
- 1 extra large egg
- 1 (8 oz.) package cream cheese, softened
- 1 cup powdered sugar
- 2 (8 oz.) containers whipped topping
- 1 (3 oz.) package instant chocolate pudding
- 1 (3 oz.) package instant vanilla pudding
- 3 1/2 cups milk
- 1 Hershey candy bar or chocolate syrup
FRUITCAKE FRENCH TOAST

Preparation: Whisk together the milk, eggs, vanilla, nutmeg, cinnamon, and salt in a shallow dish
- 1 cup whole milk
- 3 eggs
- 1 tsp vanilla extract
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cinnamon
- 1/2 tsp salt
- 1/3 cup flour
- 3 Tbsp butter
- 8 (1/2") fruitcake slices
- Warm maple syrup, for serving

BAKE at 375°F 35 to 40 minutes or until edges are deep golden brown and center biscuit pieces are no longer doughy
- 1 CUT each biscuit into 8 pieces; toss with salsa to coat.
- 2 SPREAD in sprayed 8-inch square (2-quart) glass baking dish; sprinkle with remaining ingredients.
- 3 BAKE at 375°F 35 to 40 minutes or until edges are deep golden brown and center biscuit pieces are no longer doughy. Let stand 15 minutes. Serve with additional salsa, if desired.
