BACON & RED WINE-BRAISED TURKEY LEGS

- Ingredients:
- 1 Tbsp cooking oil
- 2 whole turkey legs
- Salt and pepper, to taste
- 1/2 cup bacon, diced
- 1 cup onion, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 2 garlic cloves, sliced
- 1 Tbsp butter
- 1/4 cup tomato paste
- 2 Tbsp honey
- 2 Tbsp flour
- 3-4 sprigs thyme
- 3-4 sprigs rosemary
- 1 bay leaf
- 1 cup red wine
- 1 qt chicken stock
- Parsley, for garnish
Garden Vegetable Pasta Salad

- 1 pound fusilli or pasta of your choice
- 2 medium eggplant
- 2 medium zucchini
- 2 medium yellow summer squash
- 1 large red onion, cut into 1/2-inch slices
- 1 medium sweet red pepper, cut in half and seeds removed
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 plum tomatoes, chopped
- 1-1/2 cups (6 ounces each) crumbled feta cheese
- 2 cans (2-1/4 ounces each) sliced ripe olives, drained
- 2 tablespoons minced fresh parsley
- PARMESAN VINAIGRETTE:•3/4 cup olive oil
- 1/3 cup grated Parmesan cheese
- 1/3 cup white wine vinegar
- 3 tablespoons lemon juice
- 1 teaspoon sugar
- 1 garlic clove, minced
- 1 teaspoon salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon pepper
Simple Green Salad with Vinaigrette Dressing

In a small bowl, whisk vinegar and oil until well combined
- Dressing ingredients:
- Lettuce Greens of your choice (I like to use a Baby Spring Mix or Butter Lettuce)
- Vinaigrette Dressing (see ingredients below)
- 1/4 cup rice vinegar (apple-cider or balsamic also work beautifully)
- 1/4 cup extra-virgin olive oil
- salt and pepper to taste
Shrimp & Pasta Formaggio

- 1/2 lb. angel hair pasta, uncooked
- 1 Tbsp. olive oil
- 3 cloves garlic, minced
- 1 can (14.5 oz.) Italian-style diced tomatoes, undrained
- 1 pkg. (6 oz.) baby spinach leaves
- 1 lb. frozen cooked cleaned (with tails left on) medium shrimp
- 1/2 cup whipping cream
- 1 cup KRAFT 2% Milk Shredded Italian* Three Cheese Blend
- 3 Tbsp. KRAFT Grated Parmesan Cheese
Crispy Brick-Grilled Barbecued Chicken
