Black Bean Burger with Fresh Salsa

- Ingredients:
- Burger:
- 1 (19-oz) can black beans, well drained
- 1 cup cooked brown rice
- 1/3 cup loosely packed cilantro leaves
- 1/2 tsp garlic powder
- 1/4 tsp kosher salt
- 1/2 tsp ground black pepper
- 1/4 tsp ground cumin
- 1/2 tsp light chili powder
- 1/4 tsp dry ground oregano
- 1 large egg
- 1/4 large green bell pepper, chopped
- 1/4 medium yellow onion, peeled and chopped
- 1/4 cup unseasoned breadcrumbs
- 1 Tbsp vegetable oil, for cooking
- Hamburger buns (optional, for serving)
- Lettuce (optional, for serving)
- Salsa:
- 1/8 red onion, peeled
- 1/3 cup loosely packed cilantro
- 1 jalapeño pepper, seeded and chunked
- 2 vine-ripened tomatoes, quartered
- 1/4 tsp ground black pepper
- 1/4 tsp salt
- 2 Tbsp fresh lime juice

In a large bowl, combine the first six ingredients
- 1-1/2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1 cup mashed ripe bananas
- 1/2 cup canola oil
- 1/2 teaspoon banana extract
- 1/2 teaspoon vanilla extract
- 1 cup shredded zucchini
- 1/2 cup chopped walnuts

- Ingredients:
- Makes : One Fruitcake (using a 2-lb. loaf pan or a 4- to 6-cup mold)
- 1/2 cup dry sherry, divided
- 2 cups Gourmet Nut Very Berry mix (M25844)
- 5 oz. butter, room temperature
- 5 oz. margarine, room temperature
- 1 cup packed light brown sugar
- 6 eggs
- 1 Tbsp. molasses
- 1 tsp. vanilla extract
- Zest of 3 lemons
- Juice of 1 lemon
- 2-1/2 cups all-purpose flour
- 1/2 cup ground nuts (almonds are nice, but any will do)
- 1 cup almonds, chopped
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- Brandy (for soaking)
