Garlic Shrimp & Asparagus Fusilli

Preparation: Serves 4 While pasta cooks, heat oil in a large skillet over medium-high heat
- 1 lb fusilli (or corkscrew) pasta, cooked and drained
- 1 Tbsp olive oil
- 2 cups sliced asparagus

- 5 garlic cloves, minced
- 1/2 lb medium shrimp, peeled, deveined, tail on
- 1 Tbsp chopped fresh oregano leaves

- FROSTING:
- 3 large eggs
- 1-1/3 cups sugar
- 1/2 cup canola oil
- 1/2 cup orange juice
- 1 teaspoon almond extract
- 2-1/2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon ground cloves
- 1-1/2 cups shredded zucchini
- 1 cup packed brown sugar
- 1/2 cup butter, cubed
- 1/4 cup 2% milk

- Cake:
- 1 box white cake mix
- Gel food coloring in the colors of purple, yellow/gold, and green
- Colored sugars and/or sprinkles
- Fondant (optional)
- Cream Cheese Icing:
- 2 (8-oz) packages cream cheese, softened to room temperature
- 6 Tbsp butter
- 2 tsp vanilla
- 1-1/2 cups confectioners' sugar
FLANK STEAK WITH HERB PESTO

- Ingredients:
- Pesto:
- 1/4 cup fresh rosemary leaves, loosely packed and chopped
- 3/4 cup fresh basil leaves, packed
- 1/4 cup fresh chives, rough chopped
- 2 tsp lemon juice
- 2-3 Tbsp toasted pecans
- 1/3 cup, plus 1 Tbsp, olive oil
- 2 Tbsp Parmesan cheese
- Salt and pepper, to taste
- Steak & Marinade:
- 1/2 cup balsamic vinegar
- 2/3 cup olive oil
- 2 –3 garlic cloves, smashed
- 2 Tbsp whole-grain or Dijon mustard
- 2 –3 Tbsp prepared pesto
- Pinch of red pepper flakes
- 1-1/2 tsp salt
- 2 –3 flank steaks

Preparation Add yeast to warm milk, stir to dissolve and set aside
- 1 1/2 cups warm milk (no warmer than 110 degrees)
- 2 packages active dry yeast (remember to proof yeast before you begin)
- 1/2 cup sugar

- 1 large room-temperature egg
- 3 large room-temperature egg yolks
- 1 tablespoon brandy or rum
