Lizzie's Chicken and Dumplings

- One 5-pound hen or chicken (makes about 4-pounds cooked, after bones and skin removed)

TURKEY ENCHILADAS

- Sauce:
- 1 can jellied cranberry sauce or 1 to 1-1/2 cups leftover cranberry sauce
- 1-1/2 tsp chipotles in adobo, chopped
- 1/2 cup taco sauce
- 1/4 cup chicken stock
- Enchiladas:
- 4 cups leftover turkey, shredded or diced
- 8 oz brie, cut into 8 slices
- 2 cups leftover stuffing
- 8 (8") flour tortillas
- 1/2 cup white cheddar cheese, shredded
- 2 –3 green onions, thinly sliced

- 1 Tbsp unsalted butter, at room temperature
- 4 cups cooked stuffing
- 1/4 lb green beans, cut into 1'' pieces and blanched
- 2-3 cups roasted turkey, chopped
- 1-1/2 cups turkey gravy
- 1/2 cup almonds, slivered
- 2 Tbsp fresh parsley, chopped
- 1/2-3/4 cup cranberry sauce

- Topping:
- 2-1/3 cup baking mix

Individual Tiramisus

- 3 egg yolks
- 1/4 cup sugar
- 2 tablespoons Marsala wine
- 1/2 cup heavy cream
- 1 cup Mock Mascarpone, recipe follows
- 3/4 cup strong coffee, sweetened with 1 tablespoon sugar, cooled
- 8 (1/2-inch thick) slices store-bought pound cake, cut in thirds
- 2 tablespoons unsweetened cocoa, for dusting
- 8 ounces cream cheese, at room temperature
- 2 tablespoons vanilla Greek yogurt
- 1/4 teaspoon vanilla extract
Slow Cooker Jambalaya

Place all the ingredients, except the rice, into a slow cooker and stir together
- 1-1/2 lbs boneless, skinless chicken thighs, cut into 1" pieces
- 1 lb smoked andouille sausage, diced
- 1 lb boneless pork loin, cut into 1" pieces
- 1 cup diced onions
- 1 cup diced celery
- 1 cup diced green pepper
- 1 cup beef stock
- 1/2 tsp dried thyme
- 2 tsp dried parsley flakes
- 2 tsp dried oregano
- 1/4 tsp cayenne pepper
- 2 tsp Cajun seasoning
- 1 tsp minced garlic
- 1 (28-oz) can tomato sauce
- 1 Tbsp tomato paste
- 4 cups cooked rice
Chocolate Peanut Butter Pizza

Spread dough evenly on the bottom and up the sides of a lightly greased 12-inch pizza pan
- Topping Suggestions:
- 1 18-oz. roll of refrigerated sugar cookie dough
- 1/2 cup creamy peanut butter
- 1-1/4 cups milk chocolate and peanut butter morsels
- 1/4 cup miniature candy-coated chocolate pieces
- 1/4 cup chopped salted peanuts
- Hot fudge sauce
- Have all your desired toppings ready before placing chocolate pizza in the oven, as they must be put on when the pizza is hot.
- English-style toffee candy bars, coarsely chopped
- Shredded, sweetened coconut
- Chocolate peanut brittle candy bars, coarsely chopped
- Banana, peeled and sliced
- Miniature marshmallows
- Melted white chocolate
- Maraschino cherries
