Pumpkin Bread with Brown Butter Maple Icing

- 1/2 cup butter, softened
- 1 cup dark brown sugar
- 1 cup canned pumpkin puree (the puree, NOT pumpkin pie filling!)
- 2 eggs
- 1 & 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 & 1/2 cups all-purpose flour
- 1/2 cup (1 stick) butter
- 2 cups powdered sugar
- 1 Tbsp maple syrup
- 2-3 Tbsp milk, optional if glaze is too thick
Ham Loaf with Mashed Sweet Potato Topping

- 3/4 lb ham, finely ground in a food processor
- 1 cup bread crumbs

- 2 lbs sweet potatoes, peeled and cut into 1” pieces
- 1/4 cup heavy cream
- 2 Tbsp butter
- Pinch of cayenne

- 8 lasagna noodles, uncooked
- 14 oz freshly shredded, low-moisture part skim Mozzarella cheese, divided
- 3/4 cup Ricotta cheese

- 1/3 cup freshly, finely shredded Parmesan cheese (about 1 1/4 oz)

- 3 - 4 medium Roma tomatoes, thinly sliced (about 1/6 inch thick slices)
- 1/4 cup chopped fresh basil, plus more for garnish
