KAPUSTA AND BACON

Preparation Heat oven to 375 degrees
- 1 pound diced bacon
- 1 large diced onion
- 1 (2 1/2-pound) cabbage, cored and coarsely chopped
- 3 large russet potatoes, peeled, cut into 1/2-inch cubes and parboiled
- 1 teaspoon salt (or to taste)
- 1/2 to 1 teaspoon pepper (or to taste)
- 1/2 cup heavy cream
- 1/2 cup shredded Polish Koldamer or Kurpianka cheese or Swiss cheese

- 5 cups sliced peeled fresh or frozen peaches
- 1/3 cup maple-flavored or pancake syrup
- 1/4 cup firmly packed brown sugar
- 2 Tbsp. MINUTE Tapioca
- 1 Tbsp. lemon juice
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1 cup all-purpose baking mix
- 2 Tbsp. granulated sugar
- 1/4 cup milk
Avocado Chicken Salad

- Avocado Dressing:
- 3 cups cooked, diced chicken
- 3 cups cooked white rice
- 2 avocados, peeled, diced, and tossed with 1 tablespoon lemon juice

- 1 to 2 teaspoons pepper
- 1 teaspoon salt
- 1/4 cup chopped fresh parsley leaves
- 1 large avocado, peeled and mashed with 2 tablespoons lemon juice
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/2 teaspoon Worcestershire sauce
- 1/3 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon salt
- Dash cayenne pepper
- Thick, crusty bread, multi-grain or sourdough, for serving
- Lemon wedges, for garnish
