Rice with Peas and Bacon

Directions In a skillet over medium heat, cook the bacon lardons until browned and crispy
- 8 ounces slab bacon, cut into 1/2-inch strips or lardons (about 2 cups)
- 2 cups instant rice
- 1 cup frozen peas
- 1/2 teaspoon salt
- 1/4 cup grated Parmesan
- 2 tablespoons unsalted butter
- Zest and juice of 1 lemon
- Freshly ground black pepper

- 2 cups flour
- 1 Tbsp baking powder
- 1/4 tsp baking soda
- 1 tsp salt
- 6 Tbsp cold butter
- 1 cup buttermilk
- Directions:
- Pulse the flour, baking powder, baking soda, and salt in a food processor until combined. Add the butter and pulse until the mixture resembles sand. Add the buttermilk.
- Form a dough ball on a floured surface and press down with your fingers until the dough is 1” thick. Use a cutter and cut biscuits. Bake for 10 min at 375°F.
