Pumpkin Toffee Cinnamon Chip Cookies

Preheat oven to 350 degrees
- 3/4 cup butter, softened
- 3/4 dark brown sugar, packed
- 1 small package of pumpkin spice instant pudding mix*
- 2 eggs
- 1 teaspoon pure vanilla extract
- 1 teaspoon baking soda
- 2 1/4 cup flour
- 1 bag of cinnamon chips*
- 1 bag of toffee bits
Green Salad with Pears, Gorgonzola, and Cranberry Dressing

To prepare the dressing, add all the ingredients into the 48-oz
- Dressing:
- 1/2 cup balsamic vinegar
- 1/2 cup olive oil
- 1/4 red onion, peeled and stemmed
- 3 Tbsp. sugar
- 2 tsp. Dijon mustard
- 1/2 cup frozen cranberries, defrosted
- 1/2 cup dried cranberries
- 1/2 tsp. salt
- 1/4 tsp. pepper
- Salad:
- 1 8-oz. bag field greens
- 1 9-oz. bag romaine
- 1 5-oz. bag arugula
- 1 cup walnuts, toasted and chopped
- 2 pears, cored and julienned
- 1 cup gorgonzola, crumbled
- 6 slices thick-cut bacon, cooked and diced into 1/2-inch pieces
Thai Marinated Flank Steak with Fresh Basil

- Marinade
- 3 Tbsp rice vinegar
- 1 Tbsp chopped fresh cilantro leaves, divided
- 1 Tbsp chopped fresh mint leaves, divided
- 1 Tbsp chopped fresh basil leaves, divided
- 2 Tbsp soy sauce
- 2 Tbsp sesame oil
- 1 tsp garlic, chopped
- 1 Tbsp fresh ginger, peeled and chopped
- 1/2 tsp sugar
- 1 package rice noodles
- 1 lb flank steak, sliced into strips 1/2-inch thick
- 1 Tbsp vegetable oil
- Garnish
- 1/2 cup peanuts, chopped
- Fresh cilantro

Vegetable Minestrone

My husband and I created this recipe to replicate the minestrone soup at our favorite Italian restaurant
- 2 cans (14-1/2 ounces each) beef broth
- 1 can (16 ounces) kidney beans, rinsed and drained
- 1 can (15 ounces) great northern beans, rinsed and drained
- 1 can (14-1/2 ounces) Italian-style stewed tomatoes
- 1 large onion, chopped
- 1 medium zucchini, thinly sliced
- 1 medium carrot, shredded
- 3/4 cup tomato juice
- 1 teaspoon dried basil
- 3/4 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 1 cup frozen cut green beans, thawed
- 1/2 cup frozen chopped spinach, thawed
- 1/2 cup small shell pasta
- 1/2 cup shredded Parmesan cheese
