Butternut Squash-Filled Roasted Pork Loin

1. Preheat the oven to 375°F
- 3 butternut squash, cut in half, or any other winter squash
- 6 Tbsp olive oil
- Salt
- 1 pork loin, 4-5 lb.
- 1 Tbsp salt
- 1 Tbsp pepper
- 1 Tbsp garlic, minced
- 1 Tbsp fresh sage, minced
- 1 Tbsp butter, melted, plus more for brushing on the pork
Summer Watermelon and Feta Side Salad

Chop all ingredients and toss together in a bowl
- 1 chopped small watermelon
- 1 half chopped red onion
- 1/3 cup crumbled feta cheese
- 10-15 chopped kalamata olives
- 2 teaspoons olive oil
- 1/4 cup chopped fresh mint
Mini Meatball Stromboli

- Mini Meatballs:
- 2 slices white bread, crust removed
- 2/3 cup milk
- 1 lb ground beef, pork, and veal mixture (meatloaf mix)
- 1/4 cup Ricotta cheese
- 1/4 cup Parmesan, grated
- 1 egg
- 2 tsp salt
- 2 tsp black pepper
- 1 Tbsp parsley, chopped
- 1 tsp dried oregano
- 1 tsp dried basil
- 2 cloves garlic, minced
- Stromboli:
- 3 Tbsp olive oil
- 3/4 cup red pepper, diced
- 3/4 cup green pepper, diced
- 3/4 cup onion, diced
- 3/4 tsp salt
- 24 mini meatballs
- 2 cups David's marinara sauce
- 1 lb store-bought pizza dough
- 1 –1/2 cups Mozzarella, shredded
- 1/2 tsp Italian seasoning
White Chocolate Raspberry Cake

- Glaze:
- Cake - (serves about 6 people)
- 1 box white cake mix
- 1 1/4 cups water
- 1/3 cup oil
- 2 eggs
- 4 oz. white chocolate melted
- 1/4 cup raspberry jam or preserves, melted in microwave
- Frosting:
- 1 can vanilla frosting
- 4 oz. white chocolate melted
- 1 tsp. vanilla
- 8 oz frozen whipped topping, thawed
- Topping:
- 1 cup fresh raspberries
- white chocolate curls (I use a peeler to create the curls by scraping the side of a block of white chocolate)
- 1 box white cake mix
- 1 1/4 cups water
- 1/3 cup oil
- 2 eggs
- 4 oz. white chocolate melted
Matzo Candy with Caramel, Chocolate, and Halva

- 1 (11-ounce) box unsalted matzo crackers (11 crackers)

- 2 cups packed dark brown sugar
- 1/2 cup light corn syrup
