Beef-vegetable skillet bake

Heat oven to 375°. Brown meat in large ovenproof nonstick skillet
- 1 pound extra lean ground beef
- 1 package (8ounces) sliced fresh mushrooms
- 1 onion, chopped
- 2 cups frozen peas and carrots
- 1 can (10 3/4 oz.) reduced fat condensed cream of mushroom soup
- 1/4 pound (4 oz.) Velveeta 2% Milk processed prepared cheese product, cut into 1/2 inch cubes
- 1 can(8 oz.) refrigerated reduced fat crescent dinner rolls
Quick Beef and Pasta Pot

- 1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner
- 1 lb. lean ground beef
- 4 tomatoes, chopped
- 1/4 cup chopped fresh parsley
Beignets with Chocolate Bourbon Sauce

Makes 50 beignets
- Beignets:
- 1-1/8 tsp active dry yeast
- 3/4 cup warm water
- 1/4 cup sugar
- 1/2 tsp salt
- 1 egg, beaten
- 1/2 cup milk
- 3-1/2 cups all-purpose flour
- 1/8 cup vegetable shortening
- 1 qt vegetable oil, for frying
- Chocolate Bourbon Sauce:
- Makes 2-1/2 cups
- 1 cup sugar
- 1/4 cup light corn syrup
- 3 Tbsp water
- 3/4 cup heavy cream
- 5 Tbsp bourbon
- 8 oz bittersweet chocolate, chopped
- 1 tsp vanilla extract
Shrimp Salsa

Combine the first six ingredients in a medium-size bowl
- 1-1/2 cup tomatoes, seeded and diced (I love to combine red and yellow for this!)
- 1/2 cup fresh cilantro, chopped
- 1/3 cup fresh lime juice
- 1/3 cup extra virgin olive oil
- 1/4 cup red onion, diced
- 1 fresh jalapeño, seeded and minced
- 1-1/2 lb large cooked shrimp, peeled and deveined
- Salt and pepper, to taste
- Tortilla chips, for serving

- 1/4 cup (60 ml) milk, skim, 1% or soy
- 1/3 cup (80 ml) agave nectar or sweetener of choice

- 2 (1 lb.) bags frozen mixed vegetables
- 2 cups frozen diced hash brown potatoes
- 1 tsp. dried thyme
- 1 tsp. minced garlic
- 1 1/2 pounds frozen cooked mini meatballs
- 1 (1 lb.) can of jumbo refrigerated biscuits

- 1/4 cup freshly-squeezed orange juice
- 1 teaspoon seasoned rice vinegar
- 1 teaspoon granulated sugar

- 1 cup diced strawberries
- 1 large Fuji apple, cored and chopped

- Juice and zest of 1 orange
- 1 cup whipped topping
- Fruit (such as strawberries, cantaloupe, and pineapple, for serving)
