CHICKEN POT PIE SOUP

Makes 6 Servings
- 1 teaspoon canola oil
- 1/2 small onion, chopped
- 2 stalks celery, chopped
- 1 large potato, peeled and cubed
- 1 cup sliced mushrooms
- 3/4 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 (12-ounce) bag frozen mixed vegetables (or 2 1/2 cups)
- 4 cups reduced-sodium chicken broth
- scant 1/2 teaspoon black pepper
- 1 (12-ounce) can low-fat evaporated milk
- 1/3 cup instant flour (like Wondra)
- 2 cups diced cooked turkey
Cottage cheese cookies

Do not preheat oven, chill the dough overnight
- 2 cups of butter, softened or at room temperature
- 1 1/2 cups of packed brown sugar
- 2 cups of white sugar
- 4 eggs
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 4 teaspoons vanilla extract(1 tablespoon +1 teaspoon)
- 2 cups small curd cottage cheese (1 pound)
- 1 cup nuts, pecans, or use nuts of your choice. Chopped
- 1 cup Hershey's cocoa powder
- 5 1/2 cups of flour, do not sift, level
- 1 cup confectioners' sugar
