Grilled Chicken Broccoli Stir-fry

Marinate the chicken breast strips in the Italian dressing
- Directions:
- 1 small bottle Italian dressing
- 1 lb. chicken breast, cut into strips
- 1 head broccoli, cut into florets
- 1/2 red pepper, sliced
- 1/2 green pepper, sliced
- 1/2 yellow pepper, sliced
- 1/2 red onion, sliced
- 1 Tbsp. extra-virgin olive oil or cooking spray
- 1 Tbsp. basil
- 1 Tbsp. oregano
- 1 tsp. crushed garlic
- Salt and pepper to taste
- 1-1/2 cups rice
- 1/4 cup chopped fresh basil (optional)
- 1/4 cup roughly chopped cashews or peanuts (optional)
Frozen Pineapple Cream Pie

Preheat the oven to 425 degrees F
- 1 package refrigerated pie crust
- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 4 egg yolks, lightly beaten
- 1/3 cup sugar, plus 1/3 cup
- 1 (20-ounce) can crushed pineapple in heavy syrup, undrained
- 1 teaspoon lemon juice
- 2 cups heavy whipping cream

- 2 whole chickens (3 lb. each)
- 2 small lemons, cut in half
- 1 cup KRAFT Original Barbecue Sauce
- 1 tsp. Italian seasoning
- 4 cloves garlic, peeled

In a large bowl, mix broccoli slaw, chicken, fruits & nuts

- (You may chop/shred your own broccoli if the

- 1 Cup chopped cooked chicken breast
- 1 Large red or green apple diced
- 1/2 Cup Raisins or Craisins
- (Craisins are dried cranberries)
- 1/2 Cup seedless grapes (red or green) (halves)
- 1/2 Cup walnuts chopped
- 1/2 Cup reduced fat mayonnaise
- 2 Tbs. skim milk
- 1 Tsp. honey
- 1 Tsp. lemon juice
- 1/8 c celery seed (optional)
- Salt to taste (I didn't use any and added salt is
- not reflected in the nutritional values.)
Pork Vegetable Skillet Recipe

Cook pork in a large skillet over medium heat in 1 tablespoon oil until browned; remove and keep warm
- 1-1/2 pounds boneless pork loin chops, cubed
- 2 tablespoons olive oil, divided
- 3 cups cubed eggplant
- 1 medium zucchini, chopped
- 1 medium onion, chopped
- 1 cup fresh baby carrots, cut in half lengthwise
- 1 can (14-1/2 ounces) diced tomatoes with garlic and onion, undrained
- 1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
- 1 cup (4 ounces) sharp shredded cheddar cheese
- 1/4 cup water
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried marjoram
- Hot cooked fettuccine
