- 4 boneless, skinless chicken breasts
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp cumin
- 1 tsp chili powder
- 1/8 tsp cayenne pepper
- 1/2 tsp kosher salt
- 1 Tbsp olive oil
- Soup:
- 4 cloves garlic, minced
- 1 large onion, finely diced
- 1 red pepper, finely diced
- 1 green pepper, finely diced
- 1 jalapeño, seeded and minced
- 2 chipotle peppers in adobo, minced
- 1 (28-oz) can petite diced tomatoes
- 7 cups chicken broth
- 1 cup frozen corn kernels
- 1 tsp dried oregano
- 1/2 tsp cumin
- 1 tsp chili powder
- 1 (19-oz) can red kidney beans, drained and rinsed

WATERMELON PORK TACOS

- For the pork:
- 2 pork tenderloins (about 2 pounds), silver skin trimmed, cut into 1-inch-thick slices

- 1 tablespoon seeded and minced serrano chile
- 2 tablespoons minced fresh garlic

- 2 tablespoons oyster sauce
- 1/2 teaspoon toasted sesame oil
- For the salsa:
- 2 tablespoons rice vinegar
- 1/4 cup olive oil
- 1 tablespoon soy sauce
- 1/4 teaspoon toasted sesame oil
- 1 cup small (about 1/4 inch)watermelon cubes
- 1/4 English cucumber, seeded and cut into 1/4-inch cubes
