1) Turn Instant Pot on saute and let the pan warn up
- Toppings:
- 2 lbs. beef roast, thinly sliced (I’ve also used loin flap meat and it’s so easy to slice and cook
- 3 cloves minced garlic
- 1 tbsp. dried parsley
- 1 tsp. black pepper
- 1 tsp. salt
- 1/2 cup vegetable broth
- 1 red onion, thinly sliced
- 1 tbsp. lemon juice
- 4 tbsp. oil (olive, coconut, avocado, etc)
- Pitas or Naan bread, or Flat Out pitas (I love the Flat Out pitas the best!)
- Sliced carrots
- Sliced onions
- Sliced cucumbers
- Lettuce
- 1 tsp. apple cider vinegar (optional)
- 1 tsp. olive oil (optional)
- Feta or goat cheese
- Tzatziki Sauce:
- 1 cup plain Greek yogurt
- 1/2 cup cucumber peeled, seeded, and chopped
- 1 clove minced garlic
- 1 tsp. salt and pepper
- 2 tbsp. fresh dill

1) cut onions into rings. mix with buttermilk in a large bowl til coated
- 3 large onions, sliced 1/4" thick
- 1 C. buttermilk
- pam
- 1/2 C. flour
- 1 tsp. paprika
- 1/2 tsp. salt
- 4 egg whites, beaten
- 1 1/2 C. cornflake crumbs

1) in md sauce pan prayed with pam, place all onions
- 2 md. spanish onions,sliced
- 1 md. red onion, sliced
- 1 bunch scallions, sliced
- 3 shallots, sliced
- 1 T. olive oil
- 2 cans beef broth
- 1/2 c. white wine
- 1 tsp. worcestshire sauce
- 6 slices of french bread cut 1" thick
- 3 oz. reduced fat jarlesberg cheese
- 2 tsp. parsley
WW chicken taco soup

- 2 large frozen boneless skinless chicken breasts
- 2-15 ounce cans beans, drained and rinsed
- 2-15 ounce cans corn, drained
- 1 packet taco seasoning
- 1-10 ounce can mild enchilada sauce
- 1-14.5 ounce can fat free chicken broth

- 3 cups of shredded cheddar cheese
- 8 ounces of cream cheese

- 12 ounces of evaporated milk

Prosciutto-Wrapped Chicken Foil Packs

Heat gas or charcoal grill
- 4 boneless skinless chicken breasts (6 oz each)
- 1/4 cup refrigerated basil pesto
- 4 (1-oz) slices fresh mozzarella (from 8-oz package) SAVE $
- 4 slices prosciutto SAVE $
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1 jar (6 oz) marinated artichoke hearts, drained
- 2 cups grape tomatoes, halved
- 3 cloves garlic, finely chopped
- 1/2 teaspoon crushed red pepper flakes
- 2 tablespoons thinly sliced fresh basil leaves
- 1 baguette
- 2 t tablespoons olive oil
Chicken Carnitas

Add oil to the pot and brown your chicken
- 4 bone-in skin-on chicken thighs
- 1 cup orange juice
- Juice of one lime
- 1/2 red onion sliced
- 1 fresh jalapeno peppers chopped fine
- 2 teaspoons cumin seeds (if you have only ground on hand, then use only 1 teaspoon)
- 1 teaspoon Mexican oregano *note: I explain in detail on my posole post why Mexican oregano is important but you may use “regular” oregano if it is what you have on hand
- 1 teaspoon allspice
- 1 teaspoon kosher salt
- 1 teaspoon cayenne peper
- Taco-size tortillas
- Suggested toppings: minced red onion avocado slices, salsa, cilantro
LEMON CHICKEN THIGHS

Put chicken breasts in lightly greased 8x8 baking dish
- 2 chicken breasts
- 4 oz cream cheese
- 1 cup cheddar cheese
- 1/4 cup parmesan cheese
- 1 cup artichoke hearts
- 2 cups spinach
Slow-Roasted Salmon

Preheat the oven to 275° F
- 1 teaspoon extra-virgin olive oil
- 1 1/2 pounds thick salmon fillet, or other fish like striped bass or cod (1 large fillet or four 6-ounce fillets)
- Kosher salt
- A small bunch of fresh thyme sprigs (optional)
- Chopped fresh herbs like chives, and Greek yogurt to finish (optional)
