Generously season chicken breasts (or remove skin of chicken thighs and season) with salt and pepper on both sides ...
- 2 5oz / 10 oz chicken breasts / bone-in chicken thighs (Either 2 five-ounce chicken breasts if you are making the recipe with white rice. OR. 2 ten-ounce bone-in chicken thighs if you are making the recipe with brown rice.)
- 1 bunch cilantro
- 1 cup water (at room temperature, not cold!)
- 1/2 Tbsp ghee or bacon fat
- 1 small diced onion
- 2 cloves garlic
- 1 cup white basmati rice or brown basmati rice (choose white or brown depending on the type of chicken you are using)
- 1 cup diced carrot
- 1 cup diced celery
- 1 cup diced red bell pepper
- Salt
- Pepper

- 1 1 1 cup milk
- 3 3 3 eggs
- 2 2 2 tablespoons vegetable oil, divided
- 3 3 3 tablespoons all-purpose flour

- 2 1/2 2 1/2 1/2 cups shredded pepper Jack cheese, divided
- 1 1/2 1 1/2 1/2 cups diced cooked chicken
- 1 1 1 cup low-fat sour cream
- 2 2 2 green onions, sliced
- 1 1 1 small jalapeno pepper, chopped
- 4 4 4 cloves garlic, chopped
- 1 1 1 teaspoon chili powder
- 1 1 1 teaspoon ground cumin

Push "saute" button on Instant Pot
- 1 medium – onion
- 3 clove – garlic
- 2 cup – baby carrots
- 2 cup – sliced baby bella mushrooms,
- 2 cup – brown rice, raw
- 1 tablespoon – olive oil
- 2 1/4 cup – chicken broth, low-sodium no added sugar
- 2 pound – chicken thigh, boneless, skinless
- 1/8 teaspoon – salt
- 1/8 teaspoon – black pepper, ground
- 10 ounce – soup, cream of chicken, (make your own - I used this one)
- 2 tablespoon – Worcestershire sauce
- 1 tablespoon – dry thyme
