1) in a food processor, combine ice cream, pudding mix and peanut butter
- low fat graham cracker pie crust
- 1 qt. low fat vanilla ice cream, softened
- 1 (1.4oz) box fat free, sugar free instant chocolate pudding
- 3 T. chunky peanut butter
- 1C. whipped topping
- a few graham cracker squares, crushed

- 2 t flour
- 1/4 tsp salt
- 1/4 tsp pepper
- 4 6oz chicken breast
- 1/2 c white wine
- 1 t dijon
- 1 c low sodium chicken broth

- 1/2 c shallots
- 1/2 lb snap peas
- 1/4 c chopped chives
Escarole soup

1) combine beef, 8T. of parmesan, bread crumbs, parsley, salt and pepper
- 1 lb. ground beef ( i prefer veal, beef, pork combo)
- 12 T. parmesan cheese
- 12 T. breadcrumbs
- 1/2 c. chopped parsley
- 1/2 tsp. salt
- 1/4 tsp black pepper
- 4 eggs lightly beaten
- 4 T. olive oil
- 4 c. finely chopped onion
- 4 carrots,cut into coins
- 4 garlic cloves, finely chopped
- 12 c. shredded escarole, rinsed and drained

Prep: Lightly butter a 9-inch springform pan and line the bottom with parchment paper
- 2 large eggs
- 1 cup granulated sugar

- Simply Orange (to substitute for water), plus 1/3 cup more for icing

- 1 1/4 cup KODIAK CAKES PROTEIN PANCAKE POWER CAKES, FLAPJACK AND WAFFLE BAKING MIX
- 1/4 cup zero point brown sugar substitute SUKRIN GOLD or LAKANTO GOLDEN
- 1/2 cup white sugar substitute ( I use LAKANTO CLASSIC)
- 4 Tbsp JIF WHIPS CREAMY PEANUT BUTTER
- 2 Tbsp Peanut Butter Powder ( I use BELL PLANTATION POWDERED PB2)
- 1 large egg
- 1/2 tsp vanilla extract

- 1/4 teaspoon salt
- 3/4 cup semi-sweet chocolate chips

- 6 oz crumbled feta
- 1 tsp. pepper
- 2 T. oil
- 3/4 C. chopped fresh basil
