Crockpot Mexican Street Corn & Chicken Chowder

Spray a large crockpot (I use a 6 quart crockpot) with nonstick spray
- 1 pound boneless skinless chicken breasts or thighs
- 2 cloves garlic minced
- 1 cup Swanson® Organic Free-Range Chicken Stock or broth
- 2 cans (14.75 ounces EACH) cream style corn
- 1 can (14.75 ounces) fire-roasted corn or regular canned corn or Mexicorn (this is what is pictured in the photos -- has the added red & green pepper)
- 1 can (15.5 ounces) black beans drained and rinsed
- 1 can (4 ounces) fire-roasted diced green chiles
- 2 teaspoons chipotle chili powder regular chili powder also works
- 1/2 teaspoon paprika
- 1 and 1/4 teaspoon ground cumin
- 2 cups Colby OR Monterey Jack Cheese freshly grated; not from a bag
- 2 cups half and half or heavy cream
- Salt and pepper to taste
- Optional additions: fresh lime, fresh cilantro, diced onion, hot sauce, sour cream, avocado
POTATO SALAD

Put the steamer basket in the pressure cooker pot
- 6 medium russet potatoes, peeled and cubed
- 1 1/2 cups water
- 4 large eggs
- 1/4 cup finely chopped onion
- 1 cup mayonnaise
- 2 tablespoons finely chopped fresh parsley
- 1 tablespoon dill pickle juice
- 1 tablespoon mustard
- Salt and pepper to taste
Coconut braised short ribs

Preheat oven to 300ºF. Heat a Dutch oven over high heat
- 2 lbs bone-in short ribs (3 bone cut works best)
- Salt and pepper
- 1 Tbsp coconut oil
- 4 garlic cloves, smashed
- 1 Fresno chili, sliced
- 2-inch piece of ginger, sliced into coins
- 1 lemongrass stalk, smashed and sliced
- 1 Tbsp Chinese five-spice
- 1 can full-fat coconut milk
- 2 Tbsp brown sugar
- 1 cup beef stock
- Dash of fish sauce
- 5 sprigs of cilantro
- Chili peanut sauce
- 1/4 cup roasted peanuts, chopped
- 1/4 cup red chili paste
- 1 Tbsp rice wine vinegar
- 1 Tbsp sesame oil
- 1 Tbsp brown sugar
- For serving
- Sticky rice
- Toasted coconut
- Cilantro leaves

Moroccan Lemon Chicken with Olives

Trim fat from chicken and place in Container or Baggie
- 2 pounds Chicken Breasts/Thighs boneless/skinless
- 2 large Yellow/Brown Onion thick sliced
- 1 Tablespoon Extra Virgin Olive Oil
- 4 cloves Fresh Garlic minced
- 1/2 cup Chicken Stock/Broth
- 1.5 teaspoons Paprika
- 1.5 teaspoons Ground Cumin
- 1 teaspoon Sambal Oelek Ground Chili Paste (optional)
- 1 teaspoon Ground Ginger
- 1 teaspoon Ground Coriander
- 1 teaspoon Turmeric Powder
- 1 Cinnamon Sticks

- 12 slices bacon

- 1/2 cup milk (skim, reduced fat, full fat or almond milk)
- 1/2 cup butter, room temperature (or spread of choice)
- 3/4 cup sugar (or a natural granulated sweetener)
- 2 large eggs
- 1 tablespoon lemon zest
- 1 1/2 cup all purpose flour (or plain flour)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- (4 1/2 oz) fresh blueberries
- Cheesecake:
- 1 cup (8 oz | 250 g) light cream cheese, at room temperature
- 1/3 cup plain 2% Greek yogurt
- 1/3 cup natural powdered sweetener (or powdered sugar)
- 1 heaping tablespoon all-purpose flour (plain flour)
