Make the Pan di Spagna: 1) Preheat oven to 350 degrees
- Pan di Spagna:
- 2 Cups All purpose flour or 00
- 2 Cups Sugar
- 12 Eggs
- 6 Tsp Baking powder
- Chantilly Cream:
- 4 1/4 Cups Milk
- 1 1/2 Cups Sugar
- 3/4 Cup Corn Starch
- 10 Egg Yolks
- 1 Tsp Vanilla Extract
- Peel of one lemon (I cut mine into one long peel so it's easy to remove)
- 1 1/2 Cups Heavy Cream
- 2 Tbsp Confectioners Sugar
- Other Ingredients:
- 1 1/2 Cups Champagne, Prosecco or Spumante
- 1 1/2 Cups Fresh Strawberries, sliced
Paste di Mandorla - Almond Cookies

Boil the almonds and remove the peel
- COOKIES:
- 1 Lb Almonds
- 1/2 Lb Flour
- 1/2 Lb Sugar
- Zest of one lemon
- 1/2 Tsp Cinnamon

Preheat oven and pizza stone or baking sheet to 475 degrees
