Stuffed Bell Peppers

Heat oven to 350-degrees. Set one cup of brown rice to cook on the stove
- 6 large red peppers
- 4 sausages (chicken, pork, turkey...)
- 1 large onion
- 1 cup of halved cherry tomatoes
- 1 cup of brown rice
- 2 tablespoons of butter (or olive oil)
- salt and pepper
Cheddar Chive Rice

Add rice, chicken broth, garlic powder, and a few grinds of black pepper to a small saucepan
- 1 c. uncooked rice (I used medium grain white rice)
- 2 c. low-sodium chicken broth
- 1/4 tsp. garlic powder
- freshly ground black pepper to taste
- 1/4 c. shredded cheddar cheese (2% milk cheese works great)
- 3 green onions, sliced thin
Green Bean Fries

Cauliflower Mac and Cheese

Heat oven to 400°F. In a pot cook the pasta
- 15 ounces, whole wheat elbow macaroni
- 1 head cauliflower, chopped
- 2-3 tablespoons olive oil
- 4-6 garlic cloves, chopped
- 10-16 oz reduced fat mozzarella cheese, cubed, I used the entire package, we like it gooey
- 1 cup Parmesan cheese
- 4 slices sharp provolone cheese, chopped
- 1 cup low-fat plain yogurt
- 1-2 tablespoon Dijon mustard
- 1/2 cup nonfat milk , maybe a little more, I probably use an extra few tbsp myself
- 2 tablespoons dry oregano, optional
- 1 tablespoons Cajun creole seasoning, optional
