Preparation

Step 1

In a medium skillet over medium-high heat, sauté 3 oz diced beef top sirloin in 1 tsp olive oil, turning occasionally, until browned, 5 minutes. Season with salt and pepper and set aside. Sauté 1/2 sweet potato, diced, and 1/4 cup each chopped onion and chopped red bell pepper in 1 tsp oil until vegetables soften, 5 minutes. Add steak, 3 tbsp water, 1 tsp minced garlic and 1/4 tsp ground cumin; stir to combine. Cover and cook until sweet potato is tender, adding water if necessary, 5 minutes. Top with chopped parsley.
