Mini Ham & Cheese Quinoa Cups

Preheat oven to 350 degrees
- 2 cups cooked quinoa (about 3/4 cup uncooked)
- 2 eggs
- 2 egg whites
- 1 cup zucchini, shredded
- 1 cup shredded sharp cheddar cheese
- 1/2 cup diced ham
- 1/4 cup parsley, chopped
- 2 Tablespoons parmesan cheese
- 2 green onions, sliced
- salt & pepper
BBQ Potatoes

- 1 1/2 pound potatoes (equal sized)
- 1 grated garlic clove or 1/4 to 1/2 tsp garlic powder
- chicken or vegetable broth
- tiny cubes butter
- minced parsley
- pepper and salt
Nutella Stuffed French Toast with Warm Maple Strawberry Syrup

1. Preheat a large skillet over medium heat
- For stuffed French toast
- sliced bread
- Nutella
- 2 eggs
- 1/2 cup milk, half and half or cream
- 1/4 teaspoon vanilla
- 1 tablespoon agave or honey
- olive oil or butter for cooking
- For Syrup
- 1 cup fresh or frozen strawberries
- 1/4 cup maple syrup, I used grade B

- 1 cup all-purpose flour
- 3/4 cup whole wheat pastry flour
- 1/2 cup sugar
- 1/4 cup brown sugar, packed
- 1 1/2 teaspoon pumpkin pie spice
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup pumpkin purée
- 1/3 cup coconut oil
- 1/4 cup unsalted butter, melted
- 1/4 cup applesauce
- 2 large eggs
- 1 teaspoon vanilla extract
- FOR THE CRUMB TOPPING
- 1 1/4 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/4 cup sugar
- 1 teaspoon pumpkin pie spice
- 1/2 cup (1 stick) unsalted butter, melted
Warm Toasted Marshmallow S'more Bars

1. Heat oven to 375°F. In large bowl, stir together cookie mix and crumbs
- 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
- 1 cup graham cracker crumbs
- 1 cup butter or margarine, melted
- 3 cups milk chocolate chips (18 oz)
- 4 1/2 cups miniature marshmallows
Watermelon Feta Salad

- 1 packet instant chocolate pudding mix, about 3.7 to 3.9 ounces (not sugar-free and not 'cook & serve')
- 1/4 cup unsweetened natural cocoa powder
- 2 cups all-purpose flour
- 1 teaspoon baking soda

- 1 cup semi-sweet chocolate chips

- 1 1/2 teaspoons finely grated zest from 1 lemon

- 3 T brown sugar
- 1/3 cup flour
- 5 T melted butter

- 2 cups (or less if you are me!) fresh blueberries, picked over
- 1 1/8 cups plus 1 teaspoon sugar
- 1 tablespoon water
- 2 1/2 cups unbleached all-purpose flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon table salt
- 2 large eggs
- 4 tablespoons (1/2 stick) unsalted butter, melted and cooled slightly
- 1/4 cup vegetable oil
- 1 cup buttermilk
- 2 teaspoons vanilla extract
- If topping with lemon sugar, stir together sugar and lemon zest in small bowl until combined; set aside.
