Peppers and Corn Medley

Melt butter over medium heat in a pan and add onion to saute
- 4 tablespoons butter
- 1/2 cup diced red onion
- 1 small orange bell pepper, diced
- 1 small red bell pepper, diced
- 1 small yellow bell pepper, diced
- 4 c. white corn (I use bagged corn from Trader Joe's)
- salt & pepper to taste

Preheat oven to 350 degrees F
- 2 1/4 2 1/4 1/4 cups flour (I use all-purpose)
- 1/2 1/2 1/2 cup unsweetened cocoa powder
- 1 1 1 teaspoon baking soda
- 1/2 1/2 1/2 teaspoon salt
- 1 1 1 cup butter, softened (I’ve used salted and unsalted without noticing a difference. Salted is what is in my fridge.)
- 2 1/4 2 1/4 1/4 cups sugar
- 4 4 4 eggs
- 1 1 1 cup sour cream
- 1/2 1/2 2 cup buttermilk (or milk with 2 teaspoons lemon juice)
- 1 1 1 ounce red food coloring** (I know, that is a lot of red food coloring! It is what gives it the deep red.)
- 4 4 4 teaspoons Pure Vanilla Extract
- 1 1 ounce) package 1 (8 ounce) package cream cheese, cold
- 1/4 1/4 1/4 cup butter, cold
- 2 2 2 tablespoons sour cream
- 2 2 2 teaspoons Pure Vanilla Extract
- 16 16 4 ounces confectioners’ sugar (approximately 4 cups)

- 1 favorite sugar cookie recipe, or 1 pkg sugar cookie mix in a pouch, by betty crocker
- 1 sm bx (4 serving size) french vanilla instant pudding
- 2 TBS brn sugar ( packed)
- 1 Stk melted butter= 1/2 cup

- ¾ cup brown sugar

- 1 cup chopped onions
- 1 can pork and beans

Double Chocolate Zucchini Bread

A double dose of chocolate together with Greek yogurt combine to make this a very special zucchini bread
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 2 cups all purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup non-fat plain Greek yogurt
- 2 cups zucchini, shredded (from 1 to 2 zucchini), gently packed
- 1 cup semi-sweet chocolate chips

Creamy Orzo

1. Cook orzo pasta about 8 minutes and keep about 1 cup pasta water
- 1 pound orzo
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 1 garlic clove, minced
- 1 can diced tomatoes, drained
- 1 ¼ cups heavy cream
- 1 cup frozen peas, thawed
- ¾ cup freshly grated Parmesan cheese

- 1 pound of Italian Sausage, Italian Turkey Sausage or Lean Ground Beef
- 1/2 a medium onion, diced
