Seared Halibut with Parmigiana Asparagus

For halibut: Preheat a 12-inch saute pan over medium-high heat
- 1/2 cup extra-virgin olive oil
- 2 tablespoons unsalted butter
- 4 (6-ounce) halibut steaks
- Sea salt
- White pepper
- 1/2 cup all-purpose flour
- 16 young asparagus
- 1 small shallot, minced
- 2 garlic cloves, minced
- 3 tablespoons extra-virgin olive oil
- 3/4 cup grated Parmesan
Cranberry Nut Biscotti

Sift together the flour, baking powder and cinnamon
- 1 tbsp cinnamon
- 2 tsp baking powder
- 29 oz. flour

Chimichurri Mac N Cheese

Preheat broiler to high. Cook pasta according to directions, omitting salt and oil
- 8 oz. uncooked pasta
- 1 1/4 c low fat milk
- 1 c chicken stock
- 3 tbsp all purpose flour
- 1/4 tsp salt
- 2.5 oz. extra sharp cheddar cheese, shredded and divided
- 2 oz. light processed cheese (like velveta) cubed
- 1 tsp olive oil
- 1 c chopped onion
- 1/4 c fresh oregano leaves
- 1 tbsp fresh thyme leaves
- 1/4 tsp crushed red pepper
- 8 garlic cloves, crushed
- 1 c chopped fresh flat leaf parsley stems
- 2 tbsp fresh lime juice
- Cooking spray
- 3 tbsp fresh cilantro leaves
Chicken Tikka Pizzas

- 12 oz. chicken breasts
- 1/4 c plain low fat yogurt
- 2 tsp garam marsala, divided
- Cooking spray
- 5/8 tsp kosher salt, divided

- 2 english muffins
- 1 bunch broccolini
- 1 large shallot
- 5 oz. swiss cheese
- 5 eggs
- 3/4 c half and half
- 3 tbsp unsalted butter, plus more for greasing
- Salt and pepper
- 2 tbsp finely grated parmesan cheese
Pizza Hummus

Heat the olive oil in a small pan over medium high heat
- 1 tbsp EVOO
- 1/4 c tomato paste
- 2 tsp dried oregano
- 1 tsp dried basil
- 2-3 cloves garlic
- 3 c canned chickpeas, drained and rinsed, 1/2 c liquid reserved
- 1/4 c tahini
- 1/4 c fresh lemon juice

- 8 oz. lasagna noodles
- 1 lb. turkey sausage
- 4 c. sliced mushrooms
- 1/4 c. water
- 1 lb. spinach thawed
- 28 oz. canned chunky crushed tomatoes

- 1 lb. part skim milk ricotta

Coq au Vin

- 4 chicken legs, thighs and drumsticks kept attached, skin removed
- 1 bottle red wine
- 4 cloves garlic, smashed
- 2 sprigs thyme
- 1 bay leaf
- 1 bunch fresh parsley, half whole, half chopped
- 1/4 cup olive oil
- 1 Vidalia onion, chopped
- 1 carrot, chopped
- 2 celery stalks, chopped
- 1 teaspoon cayenne pepper
- 2 tablespoons tomato paste
