Cobb Clubs

Preheat the oven to 375 degrees F
- 8 slices bacon
- 8 slices wheat or white sandwich bread
- EVOO
- Two 8 oz. pieces of boneless, skinless chicken breast cut lengthwise
- Salt and pepper
- 1 tbsp butter
- 1 tbsp hot pepper sauce
- 1 small avocado
- 1 small clove garlic, finely chopped with a little salt
- Juice of 1/2 lemon
- 1/3 c blue cheese crumbles
- 1/3 c creme fraiche or sour cream
- 4 leaves red or green leaf lettuce
- 8 slices tomato
- 4 thin slices red onion
Gingery Chicken and Pot Sticker Soup

In a large saucepan, bring broth, ginger and jalapeno to a boil
- 8 cups low sodium chicken broth
- 1/2 " piece of ginger
- 1 jalapeno, thinly sliced
- 16 oz. package frozen pot stickers
- 4 medium carrots, thinly sliced
- 8 oz. shiitake or white mushrooms, sliced
Coriander Glazed Carrots

Melt the butter in a large skillet over medium high heat
- 2 tbsp unsalted butter
- 1 tsp coriander seeds, lightly crushed
- 2 lbs baby carrots, tops trimmed
- 1/2 c fresh orange juice
- 2 tbsp fresh lime juice
- 3 tbsp packed light brown sugar
- Kosher salt and freshly ground pepper
- 1/4 c chopped fresh cilantro
Maple Bacon Grits Puff

Preheat oven to 350 degrees F
- 8 bacon strips, chopped
- 2 cups milk
- 1 1/4 c water
- 1/2 tsp salt
- 1 c quick cooking grits
- 1/2 c maple syrup
- 4 eggs lightly beaten
- Minced fresh chives
Spinach and Cheese Flatbread

Combine 1 c warm water, the sugar and yeast in a large bowl
- 2 tsp sugar
- 1 1/4 oz. packet active dry yeast
- 1 1/2 tbsp EVOO, plus more for brushing
- 2 1/4 c all purpose flour, plus more for dusting
- 3/4 tsp fine salt
- 2 c grated gouda or fontina cheese
- 1 green bell pepper, thinly sliced
- 4 scallions, thinly sliced, white and green parts separated
- 1 1/2 c loosely packed baby spinach
- Punch of sea salt or kosher salt
Sesame Chicken with Snow Peas

Whisk 3 tbsp soy sauce, 2 tsp sesame oil and the honey in a bowl
- 5 tbsp low sodium soy sauce
- 4 tsp toasted sesame oil
- 2 tsp honey
- 1 1/4 lb skinless, boneless chicken breasts cut into 3/4" chunks
- 6 tsp canola oil
- 1 tbsp grated peeled ginger
- 3 cloves garlic, minced
- 1 1/4 c low sodium chicken broth
- 3 tbsp sugar
- 3-4 tsp cornstarch
- 1 tbsp rice vinegar
- 1 tsp chili paste
- 4 c snow peas, trimmed
- Cooked brown rice
- 2 tbsp toasted sesame seeds
Glazed Lemon Ginger Scones

Preheat the oven to 375 degrees F
- 2 1/4 c all purpose flour
- 1/4 c granulated sugar
- 1 tbsp baking powder
- 2 tsp finely grated lemon zest
- 1/2 tsp salt
- 1 1/2 c heavy cream
- 1/4 c plus 2 tsp fresh lemon juice
- 1/4 c finely chopped candied ginger
- 2 c confectioner's sugar
Kohlrabi, Fennel and Blueberry Salad

Preheat the oven to 350 degrees F
- 1/2 c sliced almonds
- 2 tbsp minced, peeled fresh ginger
- 2 tbsp minced shallot
- 1 tbsp white balsamic vinegar
- 1 tbsp mayonnaise
- 1 1/2 tsp Dijon mustard
- 1 tsp soy sauce
- 1 tsp pure maple syrup
- 1/4 c grapeseed oil
- Salt and freshly ground pepper
- 1 1/4 lbs kohlrabi, peeled and very thinly sliced on a mandoline
- 2 oz. semifirm goat cheese, shaved
- 1 c blueberries or pitted halved sweet cherries
- 2 tbsp torn mint leaves
Chinese Beef with Broccoli

Whisk 1 tbsp cornstarch, 3 tbsp soy sauce, 1 tsp sugar and 1 tbsp peanut oil in a large bowl
- 2 tbsp cornstarch
- 4 tbsp soy sauce
- 2 tsp sugar
- 5 tbsp peanut oil
- 1 lb flank steak, thinly sliced against the grain
- 1 1/4 c low sodium chicken broth
- 4 thin slices peeled ginger
- 1 head broccoli, cut into florets
- 1 large onion, halved and sliced 1/2" thick
- 3 plum tomatoes, quartered lengthwise
- 2 cloves garlic, minced
- Cooked white rice, for serving
Pea and Bacon Risotto

In a skillet, cook the bacon over moderate heat until crisp, 6 mins
- 6 oz. lean bacon, diced
- 2 c frozen baby peas, thawed
- 2 tbsp olive oil
- 1 small onion, minced
- 2 c arborio rice
- 1/2 c dry white wine
- 7 c simmering chicken stock
- 1 tbsp unsalted butter
- 1/2 c freshly grated parmesan reggiano cheese
- 1 tbsp fresh lemon juice
- Salt and freshly ground pepper
- 2 c small pea shoots
