  • 1 c. brewed coffee
  • One 12 oz. bottle pale ale
  • 2 tbsp veg. oil
  • 3 lbs. boneless short ribs, cut into scant 1 in. cubes
  • Salt and freshly ground pepper
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 3/4 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/8 tsp ground cinnamon
  • 6 c. chicken stock
  • 1/4 c. masa harina or fine cornmeal
  • 1 oz. bittersweet chocolate
  • Chipotle hot sauce
  • Shredded cheddar cheese, chopped red onion and warm corn tortillas, for serving
