Chicken Satay Stir-Fry with Orange Scented Jasmine Rice

Heat water with orange zest to boiling
- Satay sauce:
- 3 3/4 cups water
- 2 oranges, zested
- 2 cups jasmine rice, rinsed
- 2 tablespoons canola or safflower oil, 2 turns of the pan
- 1 1/2 to 1 3/4 pounds chicken breast tenders, 2 packages, sliced on an angle into bite-size pieces
- 3 cloves garlic, crushed
- 1 medium yellow skinned onion, sliced
- 1 red bell pepper, seeded, quartered and sliced
- 1 cup shredded carrots, store bought, or 2 medium carrots cut into matchsticks
- 6 scallions, cut on an angle into 2 inch pieces
- 1 cup snow peas, a couple of handfuls
- 4 rounded tablespoonfuls chunky peanut butter
- 3 tablespoons dark soy, Tamari
- 3 tablespoons honey
- 1-inch ginger root, peeled and minced
- 1 clove garlic, crushed
- 1 teaspoon crushed red pepper flakes
- 1/2 orange, juiced
- Garnish:
- 2 ounces (1/4 cup) chopped peanuts or nut topping, available on the baking aisle
- 2 to 3 tablespoons chopped cilantro leaves or flat-leaf parsley, for garnish
- 2 to 3 tablespoons chopped fresh basil leaves
Creamy Herb Dressing for Pasta Salad

Whisk together ingredients and serve over cooked pasta and desired ingredients for salad
- 1/3 c mayonnaise
- 3 tbsp sour cream
- 1/2 tbsp lemon juice
- 1/2 c chopped mixed herbs
- Salt and pepper to taste
Shepherds Pie

Preheat oven to 350 degrees
- 1 tsp. canola oil
- 2 carrots, chopped
- 3 stalks celery, chopped
- 1 leek, cleaned and chopped
- 8 oz. mushrooms, sliced
- salt and pepper to taste
- 2 cups leftover beef stew or pot roast
- 1/2 cup beef gravy (either leftover or from a jar)
- 2 cups leftover mashed potatoes or Simply Potatoes
- 3 cloves minced garlic
- 1/4 - 3/4 cup Panko bread crumbs (or fresh bread crumbs)
- 1/4 cup grated Parmesan
- 1 Tbsp. butter, cut into small pieces

- 4 tbsp unsalted butter, plus more for the dish
- Kosher salt
- 3/4 lb medium pasta shells
- 1/2 c diced onion
- 6 oz. chicken apple sausage, sliced 1/2" thick
- 1 tbsp mustard powder
- 1/4 tsp cayenne pepper
- 1/4 c all purpose flour
- 3 c apple juice
- 1 lb monterey jack cheese, shredded
- 1/2 lb extra sharp cheddar cheese, shredded
- 1/2 c sour cream
- 35 small crackers, crushed

Deep-Dish Ham Quiche with Herb and Asparagus Salad

To make the pastry: combine the flour, salt, and sugar in a large mixing bowl
- Pastry:
- 2 cups all-purpose flour, plus more for dusting
- 1 teaspoon salt
- 1/4 teaspoon sugar
- 3/4 cup (11/2 sticks) unsalted butter, cold and cut into small chunks
- 1 large egg yolk
- 3 tablespoons ice water, plus more if needed
- Filling:
- 3 tablespoons extra-virgin-olive oil
- 2 large Vidalia onions, sliced
- 3/4 pound smoked ham, cubed
- 8 large eggs
- 1 quart heavy cream
- Kosher salt and freshly ground black pepper
- Salad:
- 2 bunches asparagus (about 1 pound each), stems trimmed
- 4 ounces Parmesan, shaved with a peeler
- 2 handfuls fresh flat-leaf parsley, hand-torn

Roasted Garlic Soup with Asiago Crostini

Make the soup: Preheat the oven to 375 degrees F
- For the soup:
- 6 large heads of garlic
- EVOO
- Salt and freshly ground pepper
- 6 tbsp unsalted butter
- 1/4 c AP flour
- 4 c chicken stock
- 1 tbsp dried italian seasoning
- 1/4 c heavy cream
- Chopped fresh parsley, for topping
- For the crostini:
- 1/3 c EVOO
- 2 cloves garlic, minced
- Freshly ground pepper
- 1/2 tsp paprika
- 1/2 tsp dried oregano, crushed
- 1 sourdough baguette, sliced 1" thick on diagonal
- 1/2 c shredded asiago cheese
New Potatoes with Parsley and Saffron

- 1/2 c water
- 1/4 c chopped fresh parsley
- 1 tbsp EVOO
- 1/2 tsp sea salt
- 1/2 tsp freshly ground black pepper

- Dash of saffron threads
- 1 lb small red potatoes

- 1 medium eggplant
- Kosher salt
- All purpose flour, for dredging
- 2 large eggs
- 3/4 c breadcrumbs
- 1/4 c grated parmesan cheese
- 1 tbsp plus 1 tsp EVOO
- 2 large plum tomatoes
- 2 tsp red wine vinegar
- 1 c ricotta cheese
- Shredded fresh basil for topping
Homemade Granola

Heat oven to 350 degrees. Place coconut on ungreased baking sheet
- 1/4 1/4 1/4 c unsweetened coconut flakes
- 3 3 3 tbsp canola oil, plus more for pans
- 4 4 4 c old fashioned oats
- 1 1 1 c wheat flakes
- 2 2 2 tbsp toasted wheat germ
- 1/2 1/2 1/2 c unsalted pumpkin seeds
- 3/4 3/4 3/4 c almonds chopped
- 1 1 1 c apple cider
- 1/3 1/3 1/3 c pure maple syrup
