Dirty Banana

- 1 oz Tia Maria or Kahlua
- 1 oz rum cream or Baileys Irish Creme
- 2 oz milk
- 1/2 oz clear simple syrup (a mixture of 1/2 water and 1/2 sugar that is simmered until sugar is dissolved)
- 1 small banana
- 1 cup ice
Mini Tomato & Goat Cheese Tarts

Preheat oven to 425 degrees
- 1 package (17.3 ounces/ 2 sheets) puff pastry, defrosted
- Good olive oil
- 4 cups thinly sliced yellow onions (2 large onions)
- 4 large garlic cloves, cut into thin slivers
- Kosher salt and freshly ground pepper
- 3 tablespoons dry white wine
- 2 teaspoons minced fresh thyme leaves
- 1/2 cup freshly grated Parmesan cheese
- 4 ounces garlic-and-herb goat cheese, such as Montrachet
- 2 Roma tomatoes, thinly sliced
- 3 tablespoons julienned basil leaves
Italian Wedding Soup

Meatballs: In a large bowl, stir together onion, parsley, egg, garlic, salt and pepper
- Meatballs:
- 1 small onion, chopped
- 1/4 c chopped fresh leaf parsley
- 1 large egg
- 4 garlic cloves, minced
- 1 tsp salt
- 1/4 tsp freshly ground pepper
- 1/2 c freshly grated parmesan cheese
- 1/4 c plain dried breadcrumbs
- 8 oz. lean ground beef
- 8 oz. ground pork
- Soup:
- 10 c reduced sodium chicken broth
- 1 lb escarole, coarsely chopped
- 2 large eggs
- 2/3 c freshly grated parmesan cheese
- Salt and freshly ground pepper
Dried Fig, Brie and Rosemary Bites

If figs are very dry, plump them in boiling water for 5 to 10 minutes
- 8 to 12 large plump dried figs
- 2 to 3 ounces Brie, cut into small pieces
- 2 teaspoons extra virgin olive oil
- 1 tablespoon fresh rosemary leaves
- 1/4 teaspoon sea salt
- 1/4 teaspoon ground pepper
Bulgogi

• 1 Combine all ingredients except the beef; stir well to dissolve
- Sauce:
- 1/2 c asian hard pear, grated
- 2 tbsp onion, minced
- 1/4 c green onions, sliced thin
- 2 tbsp sake
- 1/2 c water
- 1 tbsp garlic, minced
- 2 tbsp sesame oil
- 2 tsp sesame seeds
- 1 tsp black pepper
- 2 tsp granulated sugar
- 1 lb beef top round, sliced very thin
- 1 garlic clove
- 1 tbsp granulated sugar
- Salt
- 3 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp chinese bean paste
- 1 tsp sesame seeds, toasted
- 2 tbsp sake
- 1 tsp green onion, white part, minced
- 1 tbsp oil
- 1/4 tsp cayenne pepper

Dice chicken into bite sized pieces and marinate in montreal seasoning
- Chicken
- Montreal seasoning
- Diced onion
- Red pepper flakes
- Plum sauce
Beef Toastadas

Heat the vegetable oil in a large skillet over medium high heat
- 2 tbsp vegetable oil
- 1/2 small red onion
- 2 cloves garlic, minced
- 3/4 lb ground beef
- Kosher salt
- 2 tbsp tomato paste
- 1 tbsp chili powder
- 1 15 oz. can refried beans
- 1/3 c sour cream
- 8 corn tostadas
- 1 1/2 c shredded monteray jack cheese
- Shredded lettuce, hot sauce and cilantro for topping
Chunky Mango Guacamole

In a large bowl, combine avocados, mango, tomato, onion and cilantro
- 3 medium ripe avocados, peeled and chopped
- 1 large mango, peeled and chopped
- 1 large tomato, chopped
- 1 small red onion, chopped
- 1/4 c chopped fresh cilantro
- 3 tbsp lime juice
- 1 tsp salt
- Assorted fresh vegetables and tortilla chips
Pumpkin Pancakes

In a large bowl, combine the pancake mix, brown sugar and pumpkin pie spice
- 2 cups pancake mix
- 3 tbsp dark brown sugar
- 2 1/2 tsp pumpkin pie spice
- 1 1/2 c milk
- 1 c canned pure pumpkin puree
- 1 egg beaten
- 1 tsp vanilla
- 1 tbsp vegetable oil
Orecchiette w/ Spicy Sausage & Broccolini

Heat a large skillet over medium-high heat
- 3 links hot italian turkey sausage, removed from casings
- 1 tbsp olive oil
- 1 small onion, thinly sliced
- 2 cloves garlic, thinly sliced
- 8 oz brocolini, trimmed and cut into 1" pieces
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 c water
- 8 oz orecciette
- 1/2 c marinara sauce
- 4 oz goat cheese
