Roasted Citrus-Herb Game Hen

Place an oven rack in the lower 1/3 of the oven
- 2 (1 1/2 to 2-pound) Cornish game hens
- 1/4 cup olive oil
- 2 shallots, minced
- 2 tablespoons orange zest, from 2 medium oranges
- 2 tablespoons lemon zest, from about 3 lemons
- 2 tablespoons chopped fresh thyme leaves
- 3 tablespoons chopped fresh mint leaves
- 1 teaspoon kosher salt, plus extra for seasoning
- 1 teaspoon freshly ground black pepper, plus extra for seasoning
- 2 cups low-sodium chicken stock
- 2 tablespoons Marsala wine or dry sherry
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh orange juice
- 1/4 cup dried cranberries or currants
- 2 teaspoons all-purpose flour
- 2 tablespoons unsalted butter, at room temperature
Killer Chocolate Cheesecake

Position a rack in the middle of the oven and preheat the oven to 350 degrees F
- Crust:
- One 9 oz. package chocolate wafers, broken into large pieces
- 6 tbsp unsalted butter, melted
- Filling:
- 1 bittersweet or semisweet chocolate, chopped
- 1/4 c unsalted butter
- 2 tbsp unsweetened cocoa powder
- Three 8 oz. packages of cream cheese, at room temperature
- 1 c sugar
- 4 large eggs
- Pinch of salt
- 1 1/2 c sour cream at room temperature
- 2 tsp vanilla extract
Bottle o' Beer Beef Stew with Fire Roasted Tomatoes

Toss meat with seasoned flour to coat all sides
- 2 lbs beef stew meat, cut into 1" cubes
- 1/2 c flour seasoned with salt and pepper
- 2-3 tbsp canola or sunflower oil
- 1 large onion, peeled and cut into 1/2" pieces
- 12 oz. dark beer
- 2 c beef broth
- 1 large 28 oz. can fire roasted diced tomatoes
- 2 medium carrots, cut into 1/2" pieces
- 2 medium potatoes, cut into 1/2" pieces
- 1 c frozen peas
- Sea salt and ground pepper to taste

Crockpot Pork Roast with Apples, Sage and Rosemary

- 4-6 4-6 4-6 Granny Smith Apples, cored, cut into wedges
- 1 1 1 tbsp lemon juice
- 4 4 4 lb loin pork roast
- 1 1 1 tsp salt
- 1/2 1/2 1/2 tsp fresh ground pepper
- 2 2 2 tbsp olive oil
- 2 2 2 red onions, quartered
- 1 1 1 fresh sage sprig
- 1 1 1 fresh rosemary sprig
Leek and Gruyere Quiche

Heat the oven to 425 degrees F
- 1 refrigerated rolled pie crust
- 1 tbsp olive oil
- 2 large leeks, white and light green parts only, cut into 1/4" pieces
- Kosher salt and pepper
- 1/2 cup fresh flat leaf parsley, roughly chopped

- 1/2 cup sour cream

Grilled Mushrooms with Artichoke Hearts

- 1/4 cup extra virgin olive oil
- 1/4 cup rice vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 18 large mushrooms, stems removed
French Fry Franks

- 1/2 c all purpose flour
- 1/3 c cornmeal
- 1 tsp sugar
- 1/4 tsp paprika

- Cooking spray
- 2/3 c water
- 1/3 c dried porchini mushrooms
- 1 tbsp olive oil
- 3 packages fresh exotic mushroom blend
- 3 garlic cloves, minced
- 1/4 tsp fresh ground black pepper
- 1/8 tsp salt
- 3 tbsp refrigerated pesto
- 3 oz. shredded mozzarella cheese

- 1/2 c brown lentils
- 1 1" cinnamon stick
