Grilled Florentine Style Steaks

Refrigerate the steaks, uncovered, at least 4 hours or overnight
- 2 2-3 lb porterhouse or T-bone steaks
- 2 cloves garlic, smashed
- Vegetable oil, for the grill
- Coarse salt and freshly ground pepper
- 1 tbsp EVOO
- 1 lemon, cut into wedges
Champagne Soaked Berries with Whipped Cream

Combine champagne, 3 tbsp agave, and rind in a large bowl
- 1/2 c champagne or other sparkling wine
- 1/4 c agave nectar, divided
- 1 tsp grated orange rind
- 1 16 oz. package fresh strawberries, halved
- 2 6 oz. packages fresh blueberries
- 1/2 c heavy whipping cream
- 8 amaretti cookies, coarsely crumbled
Breakfast Praline Bread Pudding

In a large bowl, whisk the first eight ingredients until blended
- 8 eggs, lightly beaten
- 2 c half and half
- 1 c milk
- 2 tbsp brown sugar
- 3 tsp vanilla extract
- 1 tsp ground cinnamon
- 3/4 tsp nutmeg
- 1/2 tsp salt
- 1 loaf french bread, cut into 1" cubes
- 1 c chopped pecans
- 1/2 c brown sugar
- 1/2 c butter, melted
Chicken Thighs with Shallots & Spinach

- 6 boneless, skinless chicken thighs
- 1/2 tsp seasoned salt
- 1/2 tsp pepper
- 1 1/2 tsp EVOO
- 4 shallots, thinly sliced
- 1/2 c white wine
- 1/4 c fat free sour cream
- 1/4 tsp salt
- 1 pkg fresh spinach
Gemelli w/ Oven-Roasted Tomatoes & Ricotta

- 2 pints grape tomatoes
- 2 cloves garlic, slivered
- 5 tbsp EVOO
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 c flat leaf parsley leaves
- 8 oz gemelli pasta
- Pinch crushed red pepper flakes
- 6 tbsp ricotta cheese
Thai Chicken Salad Bites

In a medium bowl, stir together the oil, chili sauce, lime juice, sugar and ginger until the sugar is dissolved
- 1/4 c vegetable oil
- 1 tbsp chili garlic sauce
- 1 tbsp fresh lime juice
- 1 tsp sugar
- 1 tsp grated fresh ginger
- 2 c finely shredded cooked chicken breast
- 1/4 c finely chopped roasted peanuts
- 2 tbsp finely chopped mint
- 2 tbsp finely chopped cilantro
- 1 cucumber, sliced into 18 1/4" thick rounds
