Ingredients
- 2 cups pancake mix
- 3 tbsp dark brown sugar
- 2 1/2 tsp pumpkin pie spice
- 1 1/2 c milk
- 1 c canned pure pumpkin puree
- 1 egg beaten
- 1 tsp vanilla
- 1 tbsp vegetable oil

Preparation
Step 1
In a large bowl, combine the pancake mix, brown sugar and pumpkin pie spice. In another bowl, mix together milk, pumpkin puree, egg, vanilla and oil. Add the pumpkin mixture to the dry ingredients and stir to combine.
Heat a lightly greased griddle. Pour approximately 1/4 c for each pancake.
Serve with maple syrup.
