Instant Pot Chicken Fettuccine Alfredo

Press saute button on Instant Pot and heat olive oil until display reads "HOT"
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 pounds chicken breasts, boneless and skinless
- 2 tablespoons salted butter
- 5 cloves garlic, minced
- 2 cups heavy cream
- 2 1/2 cups chicken broth
- 1/4 teaspoon kosher salt
- 1 pinch of ground nutmeg
- 1 pound dry fettuccini noodles
- 1/2-3/4 cup parmesan cheese, shredded
- fresh basil
Chipotle Chicken Quesadillas

In a large sauté pan, heat the olive oil over medium heat
- 3 tablespoons olive oil
- 1 large red onion, chopped (about 1-1/2 cups)
- 4 garlic cloves, minced
- 1/3 cup minced chipotle peppers in adobo sauce (you'll need about 6 chilis)
- 4 vine-ripened tomatoes (about 1-1/4 pounds), seeded and diced
- 3 scallions, thinly sliced
- 2 tablespoons honey
- 2-1/2 cups cooked shredded chicken (white and/or dark meat)
- 1 teaspoon salt
- 1/2 cup chopped cilantro
- 6 10-inch diameter flour tortillas
- 4 cups shredded sharp cheddar cheese
- Sour cream, for serving (optional)
- Lime wedges, for serving (optional)

- 2-4 frozen boneless skinless chicken breasts
- 1 pkg. (8 oz.) cream cheese (let sit out to soften)
- 1 can cream of chicken soup
- 1 pkg. italian dressing seasoning
