- 1 container (8 ounces) sour cream
- 1 teaspoon rum extract
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Struesel Topping
- 1/3 cup granulated sugar
- 1 tablespoon all-purpose flour
- 1 tablespoon butter or margarine, softened
- 1/2 teaspoon ground nutmeg
- Egg Nog Glaze
- 1/2 c. powdered sugar
- 1-2 Tbsp. Egg Nog
Pumpkin Seeds

- 1 pound bulk sweet sausage
- 1 onion, chopped
- 3 cloves garlic, chopped
- One can cannellini beans (15.5-ounces)
- 2 bunches escarole, coarsely shredded

- Freshly grated nutmeg
- One container chicken stock, 32-ounce container (4 cups)
- 3/4 cup whole wheat penne pasta or ditalini pasta
- 2 teaspoons grated lemon peel
- Grated Pecorino Romano cheese, for passing around the table
Chicken Tenders with Honey Mustard Sauce

Preheat oil to 350 degrees F
- Peanut oil, for frying
- 2 pounds boneless, skinless chicken breasts
- 3 eggs
- 1 cup all-purpose flour
- 2 cups panko bread crumbs
- 1 teaspoon garlic powder
- 1 teaspoon lemon-pepper
- 1/2 teaspoon cayenne
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Honey Mustard, recipe follows
- 1/2 cup Dijon mustard
- 1/2 cup honey
- 2 tablespoons mayonnaise
- 1 tablespoons lemon juice
- Salt and pepper
Slow Cooker Mississippi Roast

Put roast in crock pot. Sprinkle ranch mix and gravy mix on top
- 1 chuck roast (4-5lbs)
- 1 packet ranch dressing/dip mix
- 1 packet gravy mix (chicken/brown/au jus)
- 1 stick butter
- 5-10 pepperoncini peppers
Lemon Parmesan Brocolli

Steam broccoli 4 minutes until tender
- 5 cups broccoli
- 2 tbsp. olive oil
- 2 minced garlic cloves
- 1/2 tsp grated lemon rind
- 1 tsp lemon juice
- 1/4 tsp kosher salt
- 3 tbsp. fresh parmesan
Sweet & Sour Chicken or Pork

Combine meat, 1 Tbsp corn starch, and 1 Tbsp soy sauce
- 1 Lb Cubed meat
- 2 Tbsp Corn Starch, Divided
- 3 Tbsp Soy Sauce, Divided
- Large Can of Pineapple Chunks
- 1/4 Cup Cider Vinegar
- 1/4 Cup Sugar
- 2 Tbsp Ketchup
- Dash of hot sauce
- 1 tsp onion powder
- 1 tsp Ginger
- 1/2 tsp Garlic
- 1 Cup Green Bell Pepper Slices
Instant Pot Roasted Garlic Guacamole

Add the onion, cilantro, jalapeño, roasted garlic and lime juice in a food processor until chunkily puréed
- 5 medium-ripe Hass avocados (they should be semi-firm to the touch; not like a tennis ball, but not like a Koosh ball either – more like a ball of clay), sliced in half with the pit removed and the meat scooped out from the inner walls of the outer skin
- 1/2 a medium yellow or red onion, cut into coarse slices
- 1 1/2 limes, juiced
- 5-10 cloves of fresh roasted garlic, which will be softened
- 1/4 cup of fresh cilantro leaves, stems removed
- 1 jalapeño pepper, seeds and white, inner ribs removed & cut coarsely (this won’t be spicy at all once the seeds and ribs are removed – it just provides flavor)
- 1/2 cup of diced tomatoes (from a 14.5 oz can is fine, but make sure it’s drained – I like using the ones with green chilies or jalapeños in it for some spice. You can also just use the whole can if you wish)
- 1/3 cup of crumbled Cotija cheese (or grated Parmesan if you absolutely can’t find Cotija)
- 1 tsp of kosher salt
- 1/2 tsp of garlic salt
- 1/2 tsp of Creole seasoning
- Tortilla chips, for dipping
Instant Pot Garlic Parmesan Chicken Wings

Add the drumettes to a large mixing bowl and toss with garlic powder, onion powder and 1 teaspoon salt and pepper
- Toss Before Pressure Cooking:
- 3 pounds chicken drumettes/wings (whichever you prefer) *See Note
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup water
- Toss Before Baking:
- 5 large garlic cloves, minced
- 2 tablespoons butter
- 2 tablespoons olive oil
- ½ teaspoon salt
- Toss Before Serving:
- 1/3 cup Parmesan cheese
- ½ teaspoon salt
- 2 tablespoons parsley (optional)
