Chocolate-Bourbon Pecan Pie

- 1/2 (15-ounce) package refrigerated piecrusts
- 1 1/2 cups chopped pecans
- 1 cup (6 ounces) semisweet chocolate morsels
- 1 cup dark corn syrup
- 1/2 cup granulated sugar
- 1/2 cup firmly packed brown sugar
- 1/4 cup bourbon (Maker's Mark)
- 4 large eggs
- 1/4 cup butter or margarine, melted
- 2 teaspoons cornmeal
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
Chicken Kabobs with Lemon and Oregano

This recipe has a great go-to grilling marinade for chicken
- 1/2 cup fresh lemon juice
- 1/4 cup dry white wine
- 2 Tbs. olive oil
- 2 garlic cloves, minced
- 2 Tbs. chopped fresh oregano
- Grated zest of 1/2 lemon
- Salt and freshly ground pepper, to taste
- 1 1/2 lb. boneless, skinless chicken breasts or
- thighs, cut into 1 1/2-inch cubes
- 1 Asian eggplant, cut crosswise into slices
- 1 red bell pepper, seeded and cut into 1-inch
- squares
- 1 yellow onion, halved, separated into layers and
- cut into 1 1/2-inch squares
- 1 lemon, cut into 8 wedges
