- 3 cups all-purpose flour
- 2 cups sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt

- 2 extra-large eggs
- 3/4 cup whole milk
- 2 teaspoons pure vanilla extract
- 1 cup mashed ripe bananas (2 bananas)

- 2 pounds baby potatoes
- 3 leeks, trimmed to 3 to 4 inches of rough greens and roots
- 3 carrots
- 1 fennel bulb
- 1 lemon, zested and halved
- 1 orange, zested and halved
- 1/3 cup EVOO
- Salt and black pepper
- 2 to 3 fresh or dried bay leaves
- 2 Cornish hens, split lengthwise, cleaned and dried
- 6 to 7 fresh thyme sprigs, leaves striped and chopped

The Kitchen Diva's Energy-Boosting Stuffed Bell Peppers

- Makes 8 servings, 2 stuffed pepper halves per serving
- 8 red, yellow, or orange bell peppers or a mixture of all (about 4 lbs)
- 2 tbsp canola or olive oil, divided
- 1 medium-sized yellow onion, chopped
- 4 garlic cloves, peeled and minced
- 1 tsp salt
- 1 tsp ground black pepper
- 1 tbsp chili powder
- 1 tbsp ground cumin
- 16 oz fresh Italian turkey sausage, removed from casing or lean ground turkey (You can use pre-cooked turkey or slices of deli turkey cut into small pieces and use it in place of the turkey sausage, if desired.)
