Spinach Squares

Serve these quiche-like spinach squares as a main dish, lunch or brunch, or as appetizers
- 3 (10 oz each) packages frozen chopped spinach or 32-ounce family-size package
- 1/2 cup finely chopped onion
- 2 tablespoons butter
- 4 large eggs, beaten
- 2 cups milk
- 3 cups soft bread crumbs
- 2 to 3 cups diced cooked ham (about 12 to 16 ounces)
- 1/2 teaspoon seasoned salt

Mixed Bean Salad

1.In a large pot of boiling salted water, cook green beans until bright green and crisp-tender, 2 to 3 minutes
- 1/2 pound green beans, trimmed and halved crosswise
- 2 tablespoons cider vinegar
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon fresh oregano leaves, finely chopped
- 1 shallot, thinly sliced
- 2 teaspoons grainy mustard
- 1 can (15.5 ounces) red kidney beans, rinsed and drained
- 1 can (15.5 ounces) chickpeas, rinsed and drained
- coarse salt and ground pepper
Honey Nut Crunch Brownie

- 1 box (1 lb 2.4 oz) Betty Crocker® Original Supreme Premium brownie mix
- Water, vegetable oil and egg called for on brownie mix box
- 2 cups miniature marshmallows

- 1/2 cup light corn syrup
- 3 tablespoons butter or margarine
- 1 1/3 cups (8 oz) peanut butter chips
- 1 1/2 teaspoons vanilla
- 1 bag (8.75 oz) Chex Mix® honey nut snack mix

Shrimp and Mango Noodle Salad

1. Place noodles in a large bowl and cover with very hot tap water
- 250-g pkg bean thread noodles
- 1 large ripe mango
- 1/4 cup lime juice, about 1 to 2 limes
- 1 tbsp brown sugar
- 1 tbsp hot chili-garlic sauce
- 1/4 tsp salt or 1 tbsp fish sauce
- 340-g pkg cooked, peeled medium shrimp
- 1/2 cup finely shredded fresh mint, basil, cilantro or a combination
Enchilada Casserole

make 4 layers of 1/4 of meat sauce, tortilla and cheese layers
- Meat Sauce:
- 1 lb ground beef
- 1/4 c chopped onions\1 c tomato sauce
- 1/2 c water
- 2 t chili
- 4 large tortilla's
- 1 c shredded cheese
- 1 tomato chopped
- 1/4 c sour cream
