Beef and Broccoli Lo Mein

Cook pasta according to package directions, omitting salt and fat; drain
- 4 cups hot cooked spaghetti (about 8 ounces uncooked pasta)
- 1 teaspoon dark sesame oil
- 1 tablespoon peanut oil
- 1 tablespoon minced peeled fresh ginger
- 4 garlic cloves, minced
- 3 cups chopped broccoli
- 1 1/2 cups vertically sliced onion
- 1 (1-pound) flank steak, trimmed and cut across the grain into long, thin strips
- 3 tablespoons low-sodium soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon oyster sauce
- 1 tablespoon chile paste with garlic
Oatmeal Pancakes

Mix ingredients together and fry until golden brown
- 1 cup whole wheat flour
- 1 cup oatmeal
- 2 tsp. baking powder
- 1/4 cup frozen apple juice concentrate
- 1 1/2 cups milk
- 2 eggs
- 1 tsp. vanilla
- applesauce
Barley Dill Salad

In saucepan bring broth and water to boil, Stir in barley, cover and bring to boil
- 900 ml Chicken broth
- 1 c water
- 1&1/2 c pearly barley
- 1 english cucumber
- 1 pt grape tomatoes, halved
- 1&1/2 c chopped celery
- 1/2 c Balsamic Vinaigrette
- 1/4 c fresh chopped dill
- 1/8 t salt and pepper
- 100 g sliced almonds, toasted
Easter Cup Cakes

•Heat oven to 350ºF (325ºF for dark or nonstick pans)
- Cupcakes
- 1 box Betty Crocker* SuperMoist* Golden or Devil's Food Cake Mix
- Water, vegetable oil and eggs called for on cake mix box
- Frosting and Decorations
- 2 1/2 cups (625 mL) shredded coconut
- Yellow liquid food colour
- 1 tub Betty Crocker* Creamy Deluxe* or Whipped Vanilla Frosting
- 48 brown miniature candy-coated chocolate baking bits

Beet Suprise Cake

Gives a great flavor to the cake
- Topping:
- 2 t lemon juice
- 1 c beets, cooked, grated
- 2&1/2 c flour
- 1 t salt
- 2 t baking soda
- 2 c sugar
- 1/2 c cocoa
- 1&1/4 c melted butter
- 4 eggs beaten
- 2 T honey
- 1/2 c milk
- 2 t vanilla
- 3 T cream
- 3 oz cream cheese
- 1 t vanilla
- pinch salt
- icing sugar
- 9 x 13 pan
- 350 oven for 40 minutes
Lazy Lasagna

Cook beef, onions, garlic, spices, drain fat
- Meat suace:
- 1 lb ground beef
- 1 can canned tomatoes
- add spagetti spices
- garlic and onions chopped
- 1/2 pkg broad egg noodles
- 2 c shredded mozza
- 1/3 c sour crream
- 1/2 c parmesan cheese
Fruit Dip 2

Stir together the orange or pineapple juice concentrate, honey and mint
- 3 Tbs. frozen orange or pineapple juice concentrate, thawed
- 1 Tbs. honey
- 2 tsp. snipped fresh mint or 1/2 tsp. dried mint, crushed
- 1 cups sour cream
- 1/2 c yogurt
- 1/2 bar cream cheese
Creamy Crab and Red Pepper Spread

Reserve 2 T onions. Mix remaining onions witht all remaining ingredients
- 2 green onions, thinly sliced
- 1 tub cream cheese spread
- 1 can chunk crabmeat, drained
- 1/2 c shredded cheese
- 1/2 c red peppers, finely chopped
- 1 T dijon mustard
- Serve with crackers

- 1 Tbsp.butter
- 4 smallboneless skinless chicken breasts (1 lb./450 g)

- 1/2 lb. (225 g) fresh green beans, trimmed, cut into 1-inch lengths
