- 1 pound medium golden beets, trimmed
- 1/4 cup extra-virgin olive oil, plus more for drizzling
- 4 thick slices of bacon, cut into 1/2-inch dice
- 1/2 pound peasant bread, cut into 1-inch cubes (6 cups)
- Salt and freshly ground pepper
- 1 pint yellow cherry tomatoes, halved
- 4 scallions, thinly sliced
- 1 teaspoon dried oregano
- 1/4 cup red wine vinegar

In a large bowl, whisk the soy sauce with the sesame oil and vinegar
- 1 tablespoon soy sauce
- 1 teaspoon toasted sesame oil
- 1 teaspoon distilled white vinegar

- One 4-ounce piece of daikon radish, peeled and thinly sliced (1 cup)

- 2 pounds russet potatoes, peeled and quartered

- 2 bay leaves
- 3 sprigs thyme
- 2 carrots, chopped
- 1 small rutabaga, peeled and chopped
- 1 medium turnip, peeled and chopped
- 2 leeks (white and light green parts only), sliced 1/2 inch thick, rinsed well
- 6 tablespoons unsalted butter
- 8 ounces button mushrooms, quartered
- 3 tablespoons all-purpose flour
- 1 teaspoon ground coriander
- 1/4 teaspoon freshly grated nutmeg
- 1 1/2 cups half-and-half
- 1 cup frozen peas
- Grated zest and juice of 1/2 lemon
- 1/4 cup chopped fresh parsley
- 2 teaspoons curry powder
