25 Minute Broccoli Cheddar Soup with Chicken and Rice

Heat an 8 quart pot over medium high heat
- 1 Tbsp extra virgin olive oil
- 1 lb boneless skinless chicken breast
- 1/2 tsp ground black pepper
- 1/2 tsp smoked paprika
- 6 cup chicken broth
- 1 cup jasmine rice
- 1 (14-oz) bag broccoli florets, frozen
- 2 Tbsp unsalted butter
- 2 Tbsp flour
- 8-oz shredded cheddar cheese (or your favorite cheese)

- 1/4 cup dried craisins
- 1/2 cup sliced mushrooms
- 3 cloves garlic, minced
- 1 1/2 tablespoons fresh sage, chopped (or 1 1/2 teaspoons dried sage)
- 1 tablespoon fresh thyme leaves, stripped from their stems and chopped (or 1 teaspoon dried thyme)
