Maple Turkey Burgers with Bacon, Blue Cheese and Onions

Bake bacon on a slotted broiling pan in a 375°F oven to crisp
- 8 slices smoky bacon
- 1 1/2 pounds ground turkey, dark and white meat combined, 80-85% lean
- 2 tablespoons real maple syrup or 1 tablespoon maple sugar
- 3 About 3 tablespoons onion, grated over the mixing bowl you place meat in
- 2 tablespoons grainy or brown mustard
- 2 tablespoons Worcestershire sauce
- Salt and pepper
- 1 tablespoon olive or canola oil
- 3 tablespoons butter
- 2 large onions, thinly sliced
- 1 apple, Honeycrisp or Gala, thinly sliced
- 1 tablespoon fresh thyme
- Juice of 1/2 lemon
- A few grates nutmeg
- 1 package sliced blue cheese, such as Castello brand sliced Danish blue cheese
- Pretzel rolls, split and prepared according to package directions
Balsamic Chocolate Truffles (Giada)

Melt the chocolate and cream in a double boiler over hot but not simmering water
- 8 1/2 ounces dark chocolate, chopped (recommended: Valrhona) 1/4 cup cream
- 2 teaspoons balsamic vinegar
- 1/2 cup cocoa powder

- PIE CRUST
- 1 1⁄2 cups flour
- 1 ⁄2 teaspoon salt
- 3 ⁄4 cup butter
- 1 egg yolk
- 2 -3 tablespoons cold water
- FILLING
- 3 1⁄2 cups ricotta cheese
- 1 ⁄4 cup flour
- 1 ⁄2 teaspoon salt
- 1 tablespoon grated fresh lemon rind
- 1 tablespoon grated orange rind
- 1 tablespoon vanilla
- 4 beaten eggs

Heat oven to 400F. Place meat in a bowl and season with salt, white pepper and 5-spice powder
- 3/4 pound ground white meat turkey, chicken or pork
- Salt and white pepper
- 1 teaspoon Chinese 5-spice powder, 1/3 palmful
- 4 to 6 thin scallions, half finely chopped and half minced
- 2-inch piece peeled ginger root, half grated and half sliced
- 3 large cloves garlic, 1 pasted or grated, 2 sliced
- A handful of breadcrumbs
- 1 egg yolk, beaten
- Sesame oil, for drizzling
- 1 tablespoon vegetable oil
- 1/4 pound shitake mushrooms, thinly sliced
- 1/4 cup soy sauce
- 2 cups water
- 1 quart chicken stock
- 1 red chili, seeded and sliced
- 3 cups shredded flat kale, baby bok choy or chard
- 1/2 About 1/2 pound whole wheat or whole grain spaghetti

- 3 tablespoons butter, melted 1/3 cup hazelnuts, toasted and coarsely chopped
- 1/4 cup packed dark brown sugar

- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1 (1-pound) loaf purchased frozen white bread dough, thawed (recommended: Bridgeford)
- 3/4 cup powdered sugar

- 2 tablespoons EVOO – Extra Virgin Olive Oil, divided
- Salt and black pepper
- 4 6-ounce pieces boneless, skinless chicken breast
- 4 6-ounce pieces boneless, skinless chicken thighs (if you like dark meat)
- 1 large shallot, finely chopped
- 2 cloves garlic, finely chopped
- 3 sprigs rosemary, finely chopped
- 1/2 cup honey
- 1 rounded tablespoon Dijon mustard
- Juice of 1 lemon
- A handful of pine nuts or sliced almonds, toasted (optional)
