- 1 pound orecchiette pasta
- 1 1/2 teaspoons anchovy paste
- 5 cloves garlic, smashed
- 1/3 cup chopped fresh parsley
- 1/4 teaspoon red pepper flakes
- 3/4 cup freshly grated pecorino
- 1 teaspoon lemon zest, from 1 large lemon
- 1/4 cup golden raisins
- 1/4 cup pine nuts, toasted

Using tongs, place the bell peppers over a gas flame
- 1 red bell pepper
- 1 orange bell pepper
- 1 pound orzo pasta
- 3 cups chicken stock
- 3 cups water
- 1 tablespoon kosher salt
- 2 tablespoons olive oil
- 7 ounces (2 links) mild Italian turkey sausage, casings removed
- 1 clove garlic, minced
- 2 plum tomatoes, chopped
- 1/4 teaspoon red pepper flakes, optional

- FOR SERVING (OPTIONAL):
- 6 large eggs
- 3/4 cup (150 grams) granulated sugar
- 1/4 teaspoon salt
- 4 cups (1 quart, about 1 liter) whole milk, divided
- 1 cup (250 ml) heavy whipping cream
- 1 teaspoon ground nutmeg (fresh if possible)
- 1 tablespoon vanilla extract
- Rum, Brandy or Whiskey

- 1-1/2 lbs lean ground beef
- 1 egg yolk
- 1/4 cup minced onion
- 1/3 cup Panko bread crumbs
